How to make homemade Chicken Pot Pie?!

Chicken Pot Pie
3 - 4 cup cooked chicken, cubed
1 can mixed vegetables, drained
1 can cream of chicken soup
? teaspoon poultry seasoning
salt and pepper
2 unbaked pie crust - 9 inch
Combine first 5 ingredients in large bowl!. Pour into prepared pie shell!. Top with remaining pie crust, seal edges with water and flute!. Cut steam slits in top, brush with milk!.
Bake at 350 degrees for 45 minutes, or until golden brown!. Let sit for at least 10 minutes before serving!.

HOMEMADE CHICKEN POT PIE
1 (10 oz!.) pkg!. frozen peas & carrots
3 c!. cooked chicken, cut into cubes
1/3 c!. butter
1/3 c!. flour
1/2 tsp!. salt
1 3/4 c!. chicken broth
3 boiled potatoes, cut into sm!. cubes
1/4 tsp!. pepper
2/3 c!. milk
Rinse frozen peas and carrots under cold water to separate; drain!. Heat butter in a 2 quart saucepan over low heat until melted!. Stir in flour, onion, salt and pepper!. Cook, stirring constantly, until mixture is bubbly; remove from heat!. Stir in broth and milk!. Heat to boiling, stirring constantly!. Boil for 1 minute!. Stir in chicken and vegetables!. Prepare pastry!.
PASTRY:
4 1/2 c!. Bisquick baking mix
1 c!. water
Mix ingredients until soft dough forms; add water if needed!. Cut into balls and roll out!. Pour chicken mixture into small oven proof casserole dishes and top with pastry!. Turn edges under the casserole rim and crimp!. Bake at 375 degrees until golden brown, about 35 minutes!.Www@FoodAQ@Com

This is a southwest version of pot pie that I came up with!. It's pretty simple and super yummy!. All the portions can be changed to your liking - there's no real science in this!.
chicken - I use the rotisserie kind from Publix, it's yummy!.
1 stalk celery, diced
2 carrots, diced
red onion, diced
can of corn, drained
can of black beans, drained and washed
chipotle peppers in adobo - they come in little cans on the ethnic food aisle
cream of chicken soup
salt & pepper
cumin, paprika
parsley (or cilantro, but I don't really dig cilantro)
handful of cheese - mexican blend, cheddar, jack!.!.!.whatever you like
pie crust
Saute the onions, carrot, and celery til it's cooked but not brown!.
Add the beans and corn - cook til it's all warmed through!.
Add the peppers - I use one or two all diced up and then add a T or 2 of the sauce!. They are fairly spicy!.
Add the soup, parsley and spices!. At this point, if it's too thick, add some chicken stock!.
Once it's well mixed it's pretty much ready to go!. I like to put this in a casserole dish, as opposed to an actual pie dish - it usually is too much for a pie pan to hold!.
Roll out the crust for the bottom, add the filling, cover with cheese, top with more pie crust and bake! 350F til it's browning and bubbling!.
