Help with Cheesecake base please!?!
I'm trying to make a non-bake cheesecake and it seems to be ok apart from the fact that I can't get the base to stick to the topping, although it does stick to the dish! I'm using a glass flan dish and have used a metal tin!. Any tips!?Www@FoodAQ@Com

I suggest you get a springform pan to avoid those problems when cutting the cake!. Here's a great site for those: http://www!.kitchenkrafts!.com/category!.as!.!.!.
also make sure all the ingredients in your filling are properly mixed and you have the right amount of gelatin for it!.

to stop the base, from sticking use a layer of grease proof non-stick baking paper,
With the base have you used biscuit base and some butter or margarine!?
with the biscuit base melt a small amount of butter or margarine, and mix it through the biscuit base mix!. then spread the mix onto the baking paper on your dish!. let the base set in the fridge!.
with the cheesecake mix make sure you use gelitine,(make sure it is edible and flavourless) so that it sets, (its the key to a non- bake cheesecake)!.
then spread the cheese mix onto the base (it should be set first), then cover with cling wrap and let it set overnight in the fridge!.
I know this works as i have made plenty of non- bake cheesecakes, and i am a chef!.Www@FoodAQ@Com

i would use a disc of greaseproof paper or baking parchcment or bake o glide in the bottom of tin!. Are you using butter in the base, cos sometimes other fats have water in, which may be responsible!. Good luck and keep a slice for me!!Www@FoodAQ@Com
