You can do it hot or cold it really does not matter but if you do it hot you burn your fingers so I'd say best to do it around room temp!. or cold!.
If you want the yoke to stay a little running just don't boil it for so long!. So if it is hard boiled in about 5 minutes then only boil it about 4 minutes!. And only put the eggs in the saucepan/pot once the water is boiling, not just hot!.
For a more natural or fresher tasting egg, it is best not to add anything to the water when you boil it!.Www@FoodAQ@Com

Hot but you can peel them under cold water so your hands don't get too hot!.

hot definitely!. but not too too hot because you dont want to burn your fingers!. rinse them in cold water real quick then take them out and peel!.

After you boil the eggs let them sit for a minute!. Then put the whole pot in the sink and run cold water in the pot!. after all the hot water is out of the pot let them sit in cold water!. Then peel them under cold running water!.Www@FoodAQ@Com
I saw on martha stewart once, that you let them cool off at room temp!. tap in middle of egg with a spoon and top and bottom are supposed to seperate no problem!. Me personally, I crack my egg and run it under cold water while peeling it, works for me!Www@FoodAQ@Com
