Question: Why, when you cut lettuce, the center is yellow!?
And do you eat the yellow center!?Www@FoodAQ@Com

It's yellowish because it hasn't been exposed to as much sunlight!. It's fine to eat other than I cut out the hard core stem in iceberg!. As an example on Romaine, the inner leaves are lighter in color and smaller because they haven't grown as long and are sweeter than those "older" outer leafs!.Www@FoodAQ@Com

I think it's cause it hasn't completely matured!. I grew some celery this year and I noticed the middle stalks were yellow when I first picked off the outside stalks and then with time they turned to green!.Www@FoodAQ@Com

Just remove the core!.
