coming from another country I am hoping I am interpreting your question correctly!. If the jelly you are using is from a packet, instant Jello! Make sure that your total liquid content when including your fruit cocktail is that required by the packet!.
Therefore: packet says add 1 pint hot water!. Your fruit cocktail maybe half pint therefore adjust the water content!.

When you make the Jello are you draining the fruit cocktail well and by well I mean in a strainer lined with paper towels!? This is what I do and have found it to work well, I also remove the pineapple it amy at times cause it to not set up properly!. As for calling you an idiot I won't, I have a daughter who is cooking challenged!.Www@FoodAQ@Com
I'm guessing you just throw the fruit cocktail into the jello without draining it!.!. If you are, you're adding more water to it then the recipe calls for!. You can substitute the cold portion of water with the fruit cocktail juice!.

Is there pineapple in your fruit cocktail!? There's an enzyme in pineapple called bromelain that attacks gelatin and makes it hard or impossible to set!. You may want to put your own fresh fruit mix, and leave out pineapple (and also papaya, which has a similar enzyme called papain)!. Www@FoodAQ@Com
Brian X got it!. The pineapple works against the Jello process unless something is done to the pineapple (which I forgot)!. Unlike what the packet says, I like to bring the Jello up to boil to ensure the gelatin will activate!.Www@FoodAQ@Com
When I use canned fruit cocktail!. I cut the water by 1/2 cup when making the jello and drain the fruit cocktail very well!. NEVER use fresh pineapple in jello!.Www@FoodAQ@Com
