Question: If pancake mix says best by May 3, 2008 and has not been opened!?

No it is expired!. Those items grow little bugs in them after time (REALLY) anything with flour in it does!. IF it gets really old - you can see them crawling around in it!. Www@FoodAQ@Com

Is it a dry mix or a liquid mix!? I wouldn't be to sure about the liquid one but I would try the flower one after this date!. However, there could be something called "flowermoth" (I'm not sure about the English word for this bacteria) in the powder!. In order to check your product, shake the package a bit!. If you see black dots or thready structures, the product isn't good anymore!.Www@FoodAQ@Com

That's a long time past the date!. I certainly wouldn't trust it!. Some pancake mixes have whey or other dairy products in them!. There's also a good chance it could be buggy, even if it hasn't been opened!. And, depending on the type of flour & other ingredients, it could be rancid!. Pancake mix is pretty cheap!. Go buy some new!. :)Www@FoodAQ@Com

IF it was kept in freezer or frig yes it's fine if not don't eat it!. Those types of items have a habit of growing a mold that you don't see and can be fatal!. You should store those things in frig or freezer if going to be around for awhile!.Www@FoodAQ@Com

It will be fine to eat it just might not rise,so they may be hard best bet, go get some more or make them from scratch

yep go ahead!. it will be totally safe to eat!.
becuase it is still sealed the bad germs wont have had any oxyen so they cant grow!.
