Well, I really think that you should use something like pork shank or pork butt in a slow cooker instead of pork tenderloin!. The reason for this is that both butt and shank have not only more flavor but also more connective tissue!. This tissue, that normally makes it tough and chewy will break down during slow and low cooking making the finished product fork tender!.

What you will need:
Some pork
1 large onion
1-2 carrots
1 bay leaf
kosher salt
black pepper
honey!?
brown sugar!?
a few cups(!?) of water

First, take whatever protein item you have decided on!. Generously season it up with some kosher salt and fresh ground black pepper!. Get a saute pan, put enough oil in it to barely coat the bottom of the pan, get it so hot the oil almost starts to smoke, and sear that lovely piece of pork that you have!. Searing means to get a nice golden brown color on all the sides without burning it or actually cooking too much of it!. You want a nice color that makes you feel happy about what you have just done!.

Once its nice and pretty on all sides take it out and turn the heat down a little!. Take some liquid and deglaze your pan!. Deglaze means to get all those nice little brown specks on the bottom of your pan up!. Throw in a little bit of water, some light beer or maybe some red wine and work a wooden spoon in the bottom of your pan, scraping up all the little brown bits that are full of wonderful flavor!. When you are finished, dump them into your crock pot!.

Now you can throw some onions and carrots in the bottom of your crock pot!. Cut them up a little but not too small!. Throw in your pork, maybe a dash or two of honey, maybe some brown sugar, and maybe a little bit of flour, a bay leaf or two, and call it a day!.

You should throw in a little water, just enough to barely coat the pork halfway to two-thirds!. Set your crock pot and walk away!.

As for the apples!? Honestly, I would probaly cook them in a seperate pan with some butter and brown sugar but I understand if you are looking for a simple, one pot kind of meal!. You can cut the apples at the same time as your carrots and onions and just put them in a little water with lemon juice to keep them from browning!. Throw them in for the last twenty mintues or so that your pork is finishing!. You shouldn't be dissapointed!.

CROCK POT PORK CHOP DINNER

6 thick pork chops
1 pkg!. Stove Top stuffing for pork
1 can apple pie filling

Brown pork chops and drain off any fat!. In crock pot, put the browned chops, stuffing (prepared as on the package)!. Top with a can of apple pie filling!. Cover and cook on medium about 3-4 hours (or on low for a longer time) until meat is tender!.

OR

PORK AND SWEET POTATO DINNER

3 lbs!. boneless pork loin
4 sweet potatoes, peeled
2 med!. size apples
1/4 c!. apple juice or white wine
2 tbsp!. brown sugar
1/2 tsp!. apple pie spice
1 tsp!. salt

Cube the pork and the sweet potatoes in serving sized pieces!. In a skillet, brown the pork cubes!. Add sweet potatoes!. Core, slice and add the apples!. Blend apple juice or white wine, brown sugar, apple pie spice and salt!. Pour over the top!. Place lid on skillet and simmer until tender, about an hour!.
CROCK POT: In the bottom of the crock pot place apple slices, then sweet potatoes, then browned pork cubes!. Pour combined juice, spices and salt over the top!. Place the lid on and cook on low speed for 8-12 hours!. Makes 6 servings!.
