HOMEMADE MACARONI & CHEESE
3 tbsp!. butter
1/4 c!. flour
1 tsp!. salt
1/2 tsp!. dry mustard
1/4 tsp!. pepper
2 1/2 c!. milk
2 c!. Cheddar cheese, grated
1/2 lb!. Velveeta cheese
1 c!. Mozzarella cheese
1 (16 oz!.) box elbow macaroni
In large saucepan, melt butter over low heat!. Stir in flour, salt, mustard and pepper until smooth; take off heat!. Little by little, stir in milk until smooth!. Stir constantly for 10 minutes on heat until thick; take off heat!. Stir in 1 1/2 cups Cheddar cheese, Velveeta cheese and Mozzarella cheese until melted!. Put cooked macaroni in a greased casserole dish, pour cheese mixture over and mix well!. Sprinkle paprika and leftover Cheddar cheese on top!. Bake at 375 degrees for 20 minutes!.

1 shallot, minced
1 cup milk, warmed (I use 2%)
1 bay leaf
10 whole white peppercorns (You can also substitute with white ground pepper)
2 whole cloves
1 sprig fresh thyme

Heat a saucepan over medium low heat!. Add butter and swirl to coat!. Be careful butter doesn’t brown!. Add shallots and sauté until tender, 1 – 2 minutes!. Add flour and whisk to combine!. Cook for 1 – 2 minutes to cook off flour taste!. Slowly add milk, whisking constantly!. Add bay leaf, peppercorns, cloves and thyme and simmer on low for about 10 minutes to combine flavors!. Strain, taste and adjust seasonings!.

I like to use parmesean, white cheddar and manchego, but you can choose other cheeses!. Then I add desired amount of macaroni or other type of pasta!. Preheat the oven to 375 degrees!.
In a 1-quart saucepan, melt the butter over low heat!. With a wire whisk mix in the flour, salt, and pepper!. Cook 1 to 2 minutes or until a smooth mixture forms!. Continue to whisk and gradually add the milk; cook about 5 minutes, until the mixture is thick and smooth!. Remove from heat!.
In a large mixing bowl, combine the cooked macaroni with the sauce, cheese, and Worcestershire sauce!. Pour into a buttered 8x8x2-inch pan and bake for 25 minutes, or until the top browns!.

This place i went to had a recipe up of homemade mac and cheese!. You get a bag of the shredded cheese that is mozerella and chedder and mix that with you noodles as well as velveta (if you want that!.) You mix different cheeses with it and bake it, it was really good, I was surprised, You boil your noodles first, add all the cheeses and mix it together then put it in a baking dish and bake it in the oven!. tastes great!Www@FoodAQ@Com

Ingredients
1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup panko bread crumbs
Directions
Preheat oven to 350 degrees F!.
In a large pot of boiling, salted water cook the pasta to al dente!.
While the pasta is cooking, in a separate pot, melt the butter!. Whisk in the flour and mustard and keep it moving for about five minutes!. Make sure it's free of lumps!. Stir in the milk, onion, bay leaf, and paprika!. Simmer for ten minutes and remove the bay leaf!.
Temper in the egg!. Stir in 3/4 of the cheese!. Season with salt and pepper!. Fold the macaroni into the mix and pour into a 2-quart casserole dish!. Top with remaining cheese!.
Melt the butter in a saute pan and toss the bread crumbs to coat!. Top the macaroni with the bread crumbs!. Bake for 30 minutes!. Remove from oven and rest for five minutes before serving

ok buy elbows!. First let the water boil!. than put in the elbows and a little bit of virgin oil so it wont stick together!.

When you mix the cheese into the overall mix use cheddar, american-NOT cheese food, and parmesian!. Let it cook real good in a cassarole dish to the consistancy of bubbling/brown on top!.Www@FoodAQ@Com
