Libby's Famous Pumpkin Pie


2 Eggs, slightly beaten
1 ? cups Libby's Solid Pack Pumpkin
? cup sugar
? teaspoon salt
1 teaspoon ground cinnamon
? teaspoon ground ginger
? teaspoon ground cloves
1 ? cups undiluted Carnation Evaporated Milk
1 9" unbaked pie crust with high fluted, edge


Preheat oven to 425 degrees!.

Combine filling ingredients in order given; pour into pie shell!.

Bake 15 minutes!. Reduce temperature to 350 degrees!.

Bake an additional 45 minutes or until knife inserted near center comes
out clean!.

Cool; garnish, if desired, with whipped topping!.

PUMPKIN PIE

3/4 cup pumpkin
2 tablespoons molasses
3/4 cup white sugar
1/2 teaspoon salt
1 1/2 tablespoons flour
2 eggs, separated
milk combined with 1 can of evaporated milk
1 teaspoon cinnamon
1/4 teaspoon ground ginger
2 tablespoons Myers rum
Pie shell

Separate eggs!. In a clean bowl beat egg whites only until slightly foamy!.

In a measuring cup, add 1 can of evaporated milk!. Add regular milk until level in measuring cup reaches 1 1/2 cups total!.

In a mixing bowl, combine all ingredients except egg whites!. Beat one minute!. Gently fold in egg whites!.

Pour into pie shell!.

Bake at 425°F for 10 minutes!. Reduce heat to 350°F and continue baking for 30 more minutes!.Www@FoodAQ@Com

Dulce de Leche Pumpkin Pie

4 ounces PHILADELPHIA Cream Cheese, softened
1 tablespoon milk
1 tablespoon sugar
1 (8 ounce) tub COOL WHIP Whipped Topping, thawed, divided
1 (6 ounce) HONEY MAID Honey Graham Pie Crust
1 cup milk
1 (15 ounce) can pumpkin
2 (3!.4 ounce) packages JELL-O Vanilla Flavor Instant Pudding & Pie Filling
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves


Mix cream cheese, 1 Tbsp!. milk and the sugar in large bowl with wire whisk until well blended!. Gently stir in half of the whipped topping!. Spread onto bottom of crust!.
Pour 1 cup milk into large bowl!. Add pumpkin, dry pudding mixes and spices!. Beat with wire whisk 2 min!. or until well blended!. (Mixture will be thick!.) Spread over cream cheese layer!.
Refrigerate 4 hours or until set!.

Top with Dulce de Leche sauce, banana slices and remaining whipped topping just before serving!. Store leftover pie in refrigerator!.

Dulce De Leche Sauce
1 quart heavy cream
2 cups sugar
1/4 teaspoon baking soda
2 cups banana slices

SAUCE: Combine ingredients in a large heavy saucepan!. (except banana)
Place over medium heat and cook without stirring until mixture boils, 15 to 20 minutes!. Briefly remove from heat!.
Reduce heat to low and cook, stirring frequently with a wooden spoon, 45 minutes to 1 hour!.
When the mixture becomes a caramel color and is think enough that you can see the bottom of the pan as you stir, remove it from heat!. Use at room temperature or cover and refrigerate!.
