teriyaki beef ribs (crock pot)
4 cheese ravioli in red wine marinara sauce (veggie night)
parmesan crusted chicken breasts
shrimp and scallops in a champagne cream sauce over pasta
kid's pick (whatever the boys want that I can make from the freezer or pantry, excluding CRAB which I am saving for a special dinner)

Chicken Hotdish
2 cans cream of mushroom soup
2 cans cream of chicken soup
2 small cans evaporated milk
4 bonless chicken breasts
1/2 stick butter
4 stalks celery
1 bag chow mein noodles
water (chicken broth can also be used)
Boil chicken in water/broth, let cool and then shred!. Chop celery, put in a bowl with butter, and microwave until butter melted and celerey is aldente!. Mix cooked chicken, celery w/butter, soup, and evaporated milk together, then bake about 30 min!. Remove from oven and mix in 1/2 bag chow mein noodles, bake another 15 min!. Serve with remaining chow mein noodles!.
*I think adding fresh snap peas to the celery mix sounds good too (and would add more color/crunch/nutrition)Www@FoodAQ@Com

LAMB CASSEROLE
2 lb!. lean boneless lamb
1 onion
2 tbsp!. butter
2 tbsp!. oil
5 tbsp!. dry white wine
Salt and pepper
1/4 lb!. bacon
1 garlic clove
3 tbsp!. chopped parsley
1/2 c!. light broth
Wipe and trim the meat and cut into neat pieces!. Peel and finely chop the onion!. Heat the butter and oil in a flame-proof casserole; add the onion and fry for 5 minutes, stirring!.
Add the meat and fry until browned on all sides!. Add the white wine, salt, and pepper!. Finely chop the bacon!. Add to the casserole with the peeled and crushed garlic, 2 tablespoons parsley, and the broth!. Stir, then cover and simmer for about 1 1/2 hours until the meat is tender!.
Taste and adjust the seasoning!. Sprinkle with the remaining parsley and serve immediately with boiled potatoes and buttered carrots!. Serves 4!.
