I forgot to add butter to a cake mix?!
Its a packet cake mix !.!.!. you know the ones where you add eggs, milk and butter!. I forgot to put the butter in mixed it up and put it in the oven before realising :S !.!.!. what effect is it going to have on the cake!?!?Www@FoodAQ@Com

In other products like cakes, and pie crusts we want gluten to stay short!. The fat acts as a barrier between the flour and whatever moisture is added, keeping the gluten strands short!. Cake flour is extra fine ground, and has a lower protein level 7 - 9 % than all-purpose flour, which is 9 - 13 % protein!.
