I forgot to add butter to a cake mix?!


Question: I forgot to add butter to a cake mix!?
Its a packet cake mix !.!.!. you know the ones where you add eggs, milk and butter!. I forgot to put the butter in mixed it up and put it in the oven before realising :S !.!.!. what effect is it going to have on the cake!?!?Www@FoodAQ@Com

According to the book "The Inquisitive Cook" fats act as tenderizers when mixed with flour!. The gluten in wheat flour produces the texture of bread when kneaded to form long strands!. In other products like cakes, and pie crusts we want gluten to stay short!. The fat acts as a barrier between the flour and whatever moisture is added, keeping the gluten strands short!. Cake flour is extra fine ground, and has a lower protein level 7 - 9 % than all-purpose flour, which is 9 - 13 % protein!. Because cake flour is made to have less gluten, your cake may not suffer too much from the lack of fat, other than the loss of flavor from the butter!.Www@FoodAQ@Com
