300g cooked salmon, skin and bones removed & flaked
200g mashed potato, with a little butter, about 30g (or margarine/olive oil if you can’t have butter)
1 egg, beaten
dry breadcrumbs, I used japanese panko breacrumbs
a little flour & beaten egg for breadcrumbing
2 tbsp chopped chives
oil for frying

Method:

Add the flaked salmon to the mashed potato and mix thoroughly!. Add enough beaten egg to moisten without getting too wet, you should still be able to mould a ball with it!. I used half an egg!. If you use too much you can always add some breadcrumbs to dry it, although I prefer to have mainly salmon inside so would avoid this step if possible!.
Add the chives and season with S&P!.
Divide the mixture into 4 or 8 and with floured hands create some ball shapes!. Flatten them into rounds!. Dip in some flour, tip off the excess, then some beaten egg and finally the breadcrumbs!.
Shallow fry for about 5 minutes on each side until crisp and golden!.

85g stale wholemeal bread
about 600g cooked wild salmon
about 300g cooked potato, mashed without milk and butter
handful of flat-leaf parsley, chopped
2 Eggs, beaten
3-4 tbsp vegetable oil or olive oil, for frying
freshly ground salt and black pepper
Crème Fra?che Tartare, to serve

Method

1!. Preheat the oven to 150°C/gas 2!.

2!. Cut the bread into small squares and place on a baking tray!. Put in the oven for 15 minutes until dried out!. Tip into a food processor and whiz to make crumbs!.

3!. Roughly mash the salmon with the potato, so it still has coarse textured flakes and is not a homogenous purée!. Mix in the parsley and season with salt and freshly ground black pepper!.

4!. Shape the mixture into twelve flat cakes, about 2cm thick!. Place them on a large plate and cover with cling film!. Leave in the fridge for an hour or two to firm up, or longer if convenient!.

5!. Tip the beaten eggs onto a large flat plate, and spread the dried breadcrumbs on another!. Dip the fishcakes first in the egg, turning to coat both sides, then in the breadcrumbs making sure the sides are well crumbed too!. Place the coated cakes on a third large plate!.

6!. Heat a shallow film of oil in a large frying pan over medium heat!. Add the fishcakes, in batches if necessary, and fry for 4 minutes or so on each side until golden brown!. Drain on paper towel!.

7!. Serve with a dollop of Crème Fra?che Tartare!.Www@FoodAQ@Com

These cakes are quick and easy and can be made in advance!. Try different fish for variation!.

450g/1lb mixed fish such as cod, haddock, salmon, smoked haddock
2 tbsp freshly chopped parsley
1 quantity mashed potato

Salt and freshly ground black pepper
vegetable oil, for frying



Method
1!. Heat the oven to 190C/375F/Gas 5!.
2!. Put the fish in a roasting tin and cook in the oven for about 10-15 minutes until opaque and starting to flake!. When cool enough to handle, take off the skin, remove any bones and flake the fish into large chunks!.
3!. Mix the fish, potato and parsley together with enough of the egg to bind the mixture!. Mix together carefully so as not to break up the fish too much!. Season well!.
4!. Shape into 8-12 patties, depending on how large you want them to be and chill thoroughly!.
5!. Heat some vegetable oil in a frying pan and heat the fish cakes until golden brown on each side and heated right through!.
6!. Serve with tomato sauce, parsley sauce or hollandaise sauce!.

1Scrub, peel and boil the potatoes!. Once soft, strain the water and mash the potatoes until creamy!.


Step2Poach 1 pound of your favorite fish in a shallow pan or a frying pan!. Keep the fish whole and don't allow the water to come to a boil!. The fish is done when you can flake pieces off easily!.

get a pan and put some potatoes on to boil and u make some mash potatoes

cook the fish and then add to the mash potato and some parsley chopped u can buy breadcrumbs in a tub or u can do some your own batter get some plain flour and add some milk and dip it in the flour and then the flour with the milk and deep fry in oil or if u use the breadcrumbs just put them in oven Www@FoodAQ@Com
