I need to use up two ripe avocados, what should I make?!

I make hubby a tuna fish salad (with tuna fish, onion, mayo, black pepper for the mix, lettuce, carrots, radishes, and tomatoes for the salad part)!. I slice 1/2 avocado and put it over the top of the salad, grinding fresh black pepper over it!.
I also use sliced avocados in a nice chicken sandwich made with cream cheese and cranberry sauce - mixed together, spread on one slice of bread - mayo spread on the other half and then the avocado placed on the mayo side!. Add shredded iceberg lettuce, diced tomato, sliced onions (if you want), and the chicken!. Very good!.
Another thing I use the sliced avocados for is on top of my Pollo Con Crema (which is Chicken in Cream Sauce made with sliced onions, garlic, diced green chilies -in a can - not jalapenos - drained-, sliced bell peppers, cream cheese, sour cream, coriander, black pepper, some boiling water with 1 tsp chicken base dissolved in it and cooked chicken cut into bite-sized pieces!.) I put that on the plate and top with the sliced avocados!. Very good also!.Www@FoodAQ@Com

1 cup crumbled Roquefort or Saint Agur blue cheese
2 tablespoons finely sliced scallions
1/4 teaspoon paprika
1/4 cup sour cream
large bag of blue corn tortilla chips
2 ripe avocados
1/4 cup sliced pickled green jalape?os from a jar
1!. Crumble or mash the blue cheese with the sour cream in a bowl!.
2!. Mash in the avocados!. If they are ripe, a fork should be all you need!.
3!. Roughly chop the sliced jalape?os and stir them into the mixture along with the finely sliced scallions!.

These are fabulous! I make them all the time and my family loves them!. (This recipe calls for 3 avocados, but you can reduce the ingredients a little!.)

4 T!. dried breadcrumbs, divided
1/4 c!. fresh Parmesan or Kraft cheese

lemon juice
Saute onion in oil!.
Stir in tomatoes & cook for 5 minutes!.
Add 2 T!. breadcrumbs!.
Keep warm over low heat!.
Mix 2 T!. breadcrumbs & cheese!.
Cut avocados lengthwise & remove pits!. Leave "meat" in the skins!.
Brush the avocados w/butter & lemon; then sprinkle w/salt & pepper!.
Fill w/tomato mixture!.
Sprinkle w/remaining breadcrumbs & cheese mixture!.
Broil 2 minutes!.

I would make Guacamole, mash the Avocados in a bowl, sprinkle with 2 teaspoons of lemon juice ( to prevent thenm from becoming dark), dice onions, tomatoes, add to mixture, stir then add salt and pepper to taste,or you can add salsa, you can add some hotsauce if you desire!. Or worse case make an Avocado mask for your skin!Www@FoodAQ@Com
Why don't you grill the avocado!? Grilling season is almost done, and you want to get as much use out of that as you can!.
I say you just spread some olive oil over them with a little salt and pepper and put it on the grill!. Careful not to mash them when removing!.
Make sure there are black marks and they are cooked!. You can dip these into sour cream and salsa or splash them with lime juice with a pineapple in the middle and drink with a margarita!.

my god that sounds good!. The most simple I can think of is cutting them up, putting lemon juice and a salty seasoning on them!. Of course you could make a small amount of guacamole!.
