Answers:
It is not at all difficult, just time consuming!.

You need to soak your beans at least 8 hours and then simmer them for at least two or three hours to get the taste and texture right!.

Simple simple!
For real cajun red beans(or canned if you wish) and rice you will need dried red beans, andouille sausage, ham, bacon, onions, celery, garlic, bell peppers, hot peppers, a roux(cooked flour and oil), water, tomatoes, green onion tops(add just before they are done) and cajun seasoning!.!.!. Serve with chow chow or green tomato relish and hot rice!. I like brown rice with it myself!.!.Tip:!.!.!. smash some of the beans when they are done to thicken the sauce!. The only thing is it takes a while to cook it!.!.!. so start in the morning!. You need to let it set for an hour before serving!.!.!.!.!.Of course you can use canned red beans not kidney beans or pinto's RED BEANS!.!.just saute the raw stuff and add to beans, tomatoes and seasonings and simmer for an hour to 1 1/2 hr!.
