Preparation
Preheat oven to 425°!.
Cover a large baking sheet with parchment paper!. Combine sour rmilk and egg whites in a shallow dish; stir well with a whisk!. Combine flour, cornmeal, 1/2 teaspoon salt, black pepper, and red pepper in a separate shallow dish; stir well!. Sprinkle chicken evenly with remaining 1/2 teaspoon salt!. Instead of buttermilk, dip the chicken in a mixture of egg and milk!. I've always used that!.
One recipe I used to have involved melting a stick of butter in a 13" x 9" pan, placing the chicken in the pan, letting it "fry" in the oven for about 30 minutes, then turning it over and frying the other side!. I think it said to dip the chicken in a milk-egg mixture, then in flour mixed with certain spices, and then place in the pan with the hot butter!.Www@FoodAQ@Com

1 cup dried bread crumbs
1 teaspoon garlic powder

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!.
In a medium bowl or gallon size resealable plastic bag, mix together the bread crumbs, garlic powder, salt, pepper, thyme and paprika!.

well I used to use a dip batter, but now!. I am trying to cut back on stuff
so I just get a large plastic bowl with a snap on lid!.!. (tupperware is good) or a large plastic bag!.!. put 1/2 cup flour in it!.!. and whatever spices you like!.!. I like garlic powder, onion powder, paprika, salt and pepper!.!. I shake this up a bit!.!. add chicken peices and shake the devil out of them to coat them all (this is a light coating)!.!.
then place them on a baking pan !.!. I then take a bit of oil and lightly brush the tops with oil!.!.!. (I dont pour it over, just enough to brown the tops)!.!. and bake the peices for 35-40 min at 350F!.!.!. turns out perfect every time!.!.!. Www@FoodAQ@Com
