Question: Leftover Turkey Recipe!?
I am in a contest for the best Thanksgiving Turkey leftover recipe!. Any ideas!? I was thinking a Turkey Pot pie with a side of rice and asparagus topped with hollaindaise Www@FoodAQ@Com

Here is one of my favorite turkey left-over's recipes:

Take your leftover turkey and shred it into bite-sized pieces!. also get your leftover stuffing out!. Steam some broccoli (or asparagus)!.

Get a box of Argo corn starch!. Make the recipe for "white sauce" that is on the side of the box!. Add several pieces of american cheese that has been cut up into small pieces so it melts!. Once the cheese is melted and you are satisfied with the taste of the cheese sauce it is ready!.

Put your cooked broccoli around the outside of your casserole dish!. Place the stuffing in the next "Row" and then put your turkey in the middle!. Pour the cheese sauce all over the top!.

Cook at 400 degrees until everything is warmed through, about 20-30 minutes!.

Note: you could also put your leftover mashed potatoes on the top (after you have added the cheese sauce) for a shepard's pie-like dish!.Www@FoodAQ@Com

Turkey in a Pastry Shell

Puff pastry shells or individual pie shells---baked
2-3 Tbsp!. butter
? c!. chopped bell pepper
? c!. chopped celery
2 cups cooked turkey or chicken
2!. Tbsp!. flour
1 cup chicken broth
? cup toasted slivered almonds
1 small jar pimentos, drained
2 hard boiled eggs, chopped
1-1? cups sour cream
Salt and pepper to taste

Saute bell pepper and celery in butter until tender!. Add meat and pimentos!. Sprinkle flour on top of mixture and stir around for about a minute!. Add broth gradually!. The mixture shouldn't be too soupy, the flour should thicken it!. Add the eggs and the almonds!.

The last step is to stir in the sour cream and heat gently until heated through!. Serve in pastry shells or puff pastry!. This recipe can be made in bulk and made ahead of time!. Heat slowly adding the sour cream when ready to serve!. The filling can be reheated, but the sour cream can separate so don't plan on reheating for company if you've added the sour cream!. (OR, serve w/ dollop of sour cream on each individual servings)

QUICK & EASY KING RANCH CHICKEN CASSEROLE

Prep: 30 min!., Cook: 19 min!., Bake: 1 hr!.; Stand: 10 min!.

1 (2-lb!.) skinned, boned, and shredded deli-roasted chicken, or 3-4 cups diced leftover chicken or turkey
2 tablespoons butter
1 medium onion, chopped
1 medium-size green bell pepper, chopped
1 garlic clove, pressed
3/4 cup chicken broth
1 (10 3/4-oz!.) can cream of mushroom soup
1 (10 3/4-oz!.) can cream of chicken soup
2 (10-oz!.) cans diced tomatoes and green chiles, drained
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon Mexican-style chili powder*
3 cups grated sharp Cheddar cheese
3 cups coarsely crumbled lime-flavored white corn tortilla chips

1!. Preheat oven to 350°F!. Melt butter in a large skillet over medium-high heat!. Add onion, and sauté 6 to 7 minutes or until tender!. Add bell pepper and garlic, and sauté 3 to 4 minutes!. Stir in chicken broth, cream of mushroom soup, and next 5 ingredients!. Cook, stirring occasionally, 8 minutes!.
2!. Layer half of chicken in a lightly greased 13- x 9-inch baking dish!. Top with half of soup mixture and 1 cup Cheddar cheese!. Cover with half of corn tortilla chips!. Repeat layers once!. Top with remaining 1 cup cheese!.
3!. Bake at 350° for 55 minutes to 1 hour or until bubbly!. Let stand 10 minutes before serving!.
*1 tsp!. chili powder and 1/8 tsp!. ground red pepper may be substituted for Mexican-style chili powder!.

Yield: Makes 8 to 10 servings

Turkey Turnovers
2 c flour, sifted
1 t baking powder
1/2 t salt
1/4 c cooking oil
3/4 c milk
1 c cooked turkey
1 c shredded cheese
1/4 c chopped celery
1 t finely chopped green onion
1 x Mayonnaise, to moisten
1 x Salt and Pepper

Preheat oven to 400 degrees!. Sift together the flour, baking
powder and salt, then add the shortening or oil and cut it in
until mixture is like a coarse meal!. Add the milk all at once
and stir until it forms a soft ball!.

Turn the dough out on a floured board and knead lightly 20-25
times!. Roll the dough out until it is 1/8 to 1/4 inch thick!.
Cut into 4-inch squares or rounds and place about 2 1/2 T!.
filling in the center of each!. Fold each square or round over
and seal (a little water to moisten helps here)!. Place on
ungreased cookie sheet and bake 15 minutes at 400 degrees, or
until turnovers are light brown at the edges!. Serves 5!.
