I am a former chef and would agree with the second lasy, deglaze the pan when cooking the meat and veg with a bit of red wine, cook it down until it is alomost gone and then add you tomatos sauce, tomato paste, tomato juice or spaghetti sauce, then simmer for 45 min -2 hrs then serve with your pasta!.Www@FoodAQ@Com

It is up to the person!. If you hate the wine, don't use it!. Myself, I wouldn't get the cheapest wine that I didn't mind too much to use for cooking, I don't afford to spend that much on something like that!. It is up to you entirely!.Www@FoodAQ@Com

A nice Chianti!. Just ask for a mid priced bottle of Italian Chianti!. Pronounced - kee on teeWww@FoodAQ@Com

Either white or red!. Only use a wine that you would drink!. Never use cooking wine or sherry, it is awful!

Something mid priced will do fine!.!.Www@FoodAQ@Com

I don't use any!. You can skip it!.

cooking sherry!.Www@FoodAQ@Com

I usually add what ever I have on hand such as Merlot or Cabernet or Chianti -- please do not use Sherry!Www@FoodAQ@Com

I love pinot noir in pasta sauce my favorite is Castle Rock, its great tasting and less than $15 a bottleWww@FoodAQ@Com
