What can I make with cilantro, I have a ton of it?!

Mango pepper salsa
2 cups chopped pitted peeled mango
1 cup chopped red bell pepper
2/3 cup chopped green onions
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime juice
4 teaspoons olive oil PreparationMix all ingredients in small bowl!. Season with salt and pepper!. (Can be made 6 hours ahead!. Cover and chill!.)

Salmon Sea Bass And Bay Scallop Ceviche Raw Like sushi:
1/2 pint grape tomatoes
1 medium purple onion, chopped
1 bunch fresh cilantro (leaves only)
1 heaping tbls vegetable and herb powder mix
1 tbls garlic powder
1/8 tsp ground cayenne pepper (or a little more)
1 tsp evaporated Celtic sea salt
juice of 2 lemons
juice of 15 limes
2 tbls raw soy sauce called nama shoyu
1 lb sushi-grade salmon, cubed
1 lb sushi-grade Chilean sea bass, cubed
1 lb sushi-grade bay scallops, cubed
Directions
In a large bowl, combine the tomatoes, onion, herbs and spices, lemon and lime juices, and soy sauce!.
Gently fold in the cubed salmon, sea bass and scallops!.
Let marinate in the refrigerator for 3 hours before serving!.
Black Bean Dip
1 (15 oz) can black beans, liquid removed and rinsed
1/2 cup shredded Monterey Jack cheese
1/2 cup corn kernels, fresh
1/2 cup onion, chopped
2 cloves garlic, finely chopped
1/4 cup fresh cilantro, chopped
3/4 cup tomatoes, chopped
1/2 cup Picante sauce, mild
1 tbsp fresh lime juice
1 tsp ground cumin
1 tsp chili powder
1 tsp vegetable oil
Partially mash beans in a medium sized mixing bowl (they should remain slightly chunky)!. Heat oil in a medium sized saucepan, on medium heat!. Mix in onion, garlic and sauté for 4 minutes!. Add beans, corn, tomato, Picante sauce, cumin, chili powder and cook for 5 minutes (or until thickened)!. Remove the pan from heat, and stir in cheese, cilantro and lime juice!. How about a big batch of chutney - the green kind they bring to you in Indian restaurants with the tamarind sauce for Somosas!.
My neighbor used to make big batches and then freeze them in small containers!.

It can be used to make a paste to slather over meat that is going to be roasted!.
It goes good in a marinade to marinate meat!.

You are sooooo lucky to have Cilantro! I'm sure you know that any Taco type foods go well with Cilantro!. I eat it plain(fresh bunch) I swear I get a happy energy rush!.Any dark green leafy veggies are the best for your body! Yummmmmmmmmmmmmmmmm, Wish I had some!Www@FoodAQ@Com
