I need help with dinner ideas PLEASE?!
something not so difficult!. but it doesnt have to be microwavable either!. im cooking for a vegetarian, she doesnt eat meat and she wants me to cook her dinner!. if you have any ideas that would be very helpful =D

Try a vegetarian casserole from Campells Kitchen!. Just go the web site which is campbells kitchen dot com and look for the swiss cheese veggie casserole!. I just added it to my list of favorite sites too and I am cooking it for dinner tonight!.!.!.along with sliced kielbasa!.Www@FoodAQ@Com
A few dinner options:
1) a nice spinach and fruit salad with raspberry walnut dressing!. (Fruit would include sliced grapes, mandarin oranges, strawberries, bananas, and almonds or pecans!.)
2) spaghetti with marinara (meatless) sauce (w/side salad if desired)
3) "taco salad" - tostitos/doritos on bottom, Morningstar crumbled soy "meat," cheese (if she's not a vegan -- or use soy cheese), chopped lettuce, onion, tomato on top, and salsa!.
4) vegetable wraps (veggies rolled in a tortilla!. Select the right combo of veggies and accent sauce to make an ethnic meal -- Asain vs!. Southwestern!.!.!.

hmmm, not so difficult, ok well let me think!.
I once made vegetarian pizza type thingos for a girl which turned out pretty good!.
Basically, it was a lebanese bread *i think that's what its called* which is basically a really thick tortilla, with a bolognaise pasta sauce (tastes better) and topped with chopped vegetables such as capsicum, a lil bit of potato, mushrooms, olives, a lil onion, tomato, maybe some egg, some carrot (NO BROCCOLI!) a bit of chilli (Not too much) parsnip, you name it!. really just anything you think will be good!.
Top with mozzarella cheese and bake until cheese is browning!.
(You may wish to precook some vegetables such as the onion)
An idea may be to mix the chopped vegetables and such in a bowl, mix in a small amount of cheese to hold everything together when cutting into it!. make sure you don't make it too cheesy!. mixing the vegetables up will make it look more appealing and evenly spread the flavours!.
Don't be afraid to experiment on your own before the dinner so you have an idea of what tastes good and what doesn't!.
*IMPORTANT* To make this 'homestyle pizza' work, you will need to add some elegant touches!.
- a sprig of fresh parsley on the pizza will add a fresh contrast to the marbled gold/browns of the melted cheese over the vegetables!.
- a personal must have: 2 salads for contrast and variety
1: a garden fresh salad: torn up hydroponic lettuce, some fresh chopped red onion & all 3 colours of capsicum, cherry tomatoes cut in half, fresh chopped black olives, anything else that tickles your fancy!.
2: a potato salad is a MUST! you can buy them premade from many stores, just dish it up and garnish with yet another sprig of parsley!
Place the two salads right next to each other on the side of the plate with the pizza!.
Alternatively, you can cut the pizza in half, seperate the two pieces far enough to fit the two salads in between, or do as I like to do:
-As sometimes the pizza is too much to eat, I cut a slice out of 2 opposite sides of the pizza, (imagine a regular pizza, now take out one slice, and take out the slice exactly opposite the last piece taken, the shape you have left is what your pizza should look like but without the extra cuts) now put one salad in each of the gaps!.
Sorry I wrote so much, but this is really a crowd pleaser!.
If you don't like that idea, try a pasta dish with a garlic bread side!.
A nice wine is always good with a home cooked meal, maybe a Cab Merlot with the pizza!? your choice there!. 1 small butternut squash, cubed
2 red bell peppers, seeded and diced
1 sweet potato, peeled and cubed
3 Yukon Gold potatoes, cubed
1 red onion, quartered
1 tablespoon chopped fresh thyme
2 tablespoons chopped fresh rosemary
1/4 cup olive oil
2 tablespoons balsamic vinegar
salt and freshly ground black pepper
Preheat oven to 475 degrees F (245 degrees C)!.
In a large bowl, combine the squash, red bell peppers, sweet potato, and Yukon Gold potatoes!. Separate the red onion quarters into pieces, and add them to the mixture!.
In a small bowl, stir together thyme, rosemary, olive oil, vinegar, salt, and pepper!. Toss with vegetables until they are coated!. Spread evenly on a large roasting pan!.
Roast for 35 to 40 minutes in the preheated oven, stirring every 10 minutes, or until vegetables are cooked through and browned!. serves 12
