How do I make my fried chicken spicy and "cajun-like" like Popeyes?!


Question: How do I make my fried chicken spicy and "cajun-like" like Popeyes!?
What seasonings do you use!? Is there a prepackaged seasoning that I can buy from the grocery store!? Do you marinate it overnight!? Do you use a special type of oil!? Any suggestions would be greatly appreciated! Thanks! :]Www@FoodAQ@Com

They don't marinate their meat, they brine it, equal parts of salt, sugar and water boiled then cooled, add the chicken in and let it sit in the fridge for 1-2 days you can add crushed red pepper to the brine to give it extra heat but most of it comes from the Cayenne pepper and paprika in the batter as for the oil most restaurants use soy or vegetable blendsWww@FoodAQ@Com

~POPEYES FAMOUS FRIED CHICKEN~ Origination Date: 1972

6 c!. vegetable oil
2/3 c!. all-purpose flour
1 T!. salt
2 T white pepper
1 t!. cayenne pepper
2 t!. paprika
3 eggs
1 frying chicken with skin, cut up

1!. Heat the oil over medium heat in a deep frying or in a wide, deep pan on the stove!.

2!. In a large, shallow bowl, combine the flour, salt, peppers and paprika!.

3!. Break the eggs into a separate shallow bowl and beat until blended!.

4!. Check the oil by dropping in a pinch of the flour mixture!. If the oil bubbles rapidly around the flour, it is ready!.

5!. Dip each piece of chicken into the eggs, then coat generously with the flour mixture!. Drop each piece into the hot oil and fry for 15 to 25 minutes, or until it is a dark golden brown!.

6!. Remove the chicken to paper towels or a rack to drain!.

You could always add in some Cajun Seasonings to your flour bath, add in some Franks hot sauce in your egg batter, add in some Spanish Paprika, Cayenne Pepper, Cajun Seasoning in your buttermilk bath (let to soak, overnight, of course), these layers of seasonings will all add to the level of spiciness when you fry your chicken and that's how they get their flavors deep within the chicken and not just on the coating!. They sell cajun seasoning or blackened seasoning at the grocery store!. Mix this seasoning in with your flour!. Add a few drops of hot sauce to your egg wash!. Then just dip chicken in egg wash, roll in flour, let set a few minutes and fry away!.Www@FoodAQ@Com

Popeye's Fried Chicken

3 c Self-rising flour
1 c Cornstarch
3 tb Seasoned salt
2 tb Paprika
1 ts Baking soda
1 pk Italian Salad Dressing Mix Powder
1 pk Onion Soup Mix -- (1 1/2 Ounces)
1 pk Spaghetti sauce mix -- (1/2 Ounce)
3 tb Sugar
3 c Corn flakes -- crushed
2 Eggs -- well beaten
4 lb Chicken -- cut up

Combine first 9 ingredients in large bowl!. Put the cornflakes into another bowl!. Put eggs and water in a 3rd bowl!. Put enough corn oil into a heavy roomy skillet to fill it 1" deep!. Get it HOT!

Grease a 9x12x2 baking pan!. Set it aside!. Preheat oven to 350~!. Dip chicken pieces 1 piece at a time as follows:
1-Into dry coating mix!.
2-Into egg and water mix!.
3-Into corn flakes!.
4-Briskly but briefly back into dry mix!.
-Drop into hot oil, skin-side-down and brown 3 to 4
minutes on medium high!. Turn and brown other side of each piece!.

Don't crowd pieces during frying!.

Place in prepared pan in single layer, skin-side-up!. Seal in foil, on 3 sides only, leaving 1 side loose for steam to escape!. Bake at 350~ for 35-40 minutes removing foil then to test tenderness of chicken!. Allow to bake uncovered 5 minutes longer to crisp the coating!. Serves 4!.

Leftovers refrigerate well up to 4 days!. Do not freeze these leftovers!. Leftover coating mix (1st 9 ingredients) can be stored at room temp in covered container up to 2 months!.Www@FoodAQ@Com
