Quick recipe for squirrel?!
My buddy introduced me into squirrel hunting and I've gotten addicted, but now I have a bag of quartered up squirrel in my freezer that i dont know how to cook!. I've ran across some recipes online, but they all call for things like simmer for a hour then cook for 40 minutes a piece!.!.!. Is there a recipe that is just like season then throw on the skillet!? I don't have time to cook for 2 hours for a few bites of meat!.Www@FoodAQ@Com

SQUIRREL SKILLET PIE
1 lg!. squirrel
1/2 c!. diced green peppers
1/4 c!. flour
1/2 c!. chopped onions
1/4 c!. chopped celery
1/2 stick butter
1 tube homestyle biscuits
Salt and pepper
Cut square into pieces!. Place in pan along with celery a pinch of salt and pepper and enough water to cover meat!. Place on burner and simmer until tender!. Cool!. Strip meat from bones, save broth!. Melt butter in iron frying pan, saute green peppers and onions!. add flour and enough broth to make gravy!. Add meat, cook on low until gravy thickens!. Add biscuits to the top!. Place in oven at 425 degrees and bake for 8-10 minutes or until biscuits are golden brown!. Serves 4!.

SQUIRREL FRICASSEE
1 lg!. squirrel, cut into serving size pieces
1/2 c!. flour
1/2 tsp!. salt
4 slices bacon, chopped fine
1 sm!. onion, chopped fine
2 tsp!. lemon juice
1 lg!. apple, cored and diced
1 1/2 c!. chicken stock
Mix flour and salt!. coat meat!. In large, heavy skillet, cook bacon!. Remove and reserve bacon!. Brown meat in bacon grease!. Sprinkle with onion and lemon juice!. Return bacon to skillet!. Add apple and stock!. Cover and simmer about 2 hours!.

SQUIRREL JAMBALAYA
1 squirrel
Salt and pepper to taste
3 tbsp!. cooking oil
2 lg!. onions, chopped
3 stalks celery, chopped
1 clove garlic, chopped
4 tbsp!. parsley flakes
Cut squirrel into serving size pieces; season to taste!. Fry in oil, in heavy skillet, until brown on all sides!. Remove from skillet!. Saute onions, celery, garlic, and parsley flakes in pan drippings until wilted!. Return squirrel to skillet!. Cover; cook over low heat until meat is tender, adding small amount of water as necessary!.

SQUIRREL WITH RICE AND POTATOES
2 old squirrels, cut up
1 green pepper, chopped
1 clove garlic, chopped
1 c!. uncooked rice
1 onion, chopped
1/4 c!. chopped celery
3 med!. potatoes, chopped
Salt and pepper
Brown squirrels in skillet with small amount of grease!. Pressure cook for 15 minutes to tenderize!. Saute onion, green pepper, celery, and garlic in skillet drippings; add rice, squirrel, potatoes, seasoning and enough liquid to cook rice and potatoes!. Cover; cook slowly until tender!. Yields 10 servings!.

STEAMED SQUIRREL
1 squirrel
1/2 c!. flour
Salt & pepper to taste
Meat tenderizer
Herb seasoning (opt!.)
1 pod of dried red pepper, crushed
1/4 c!. onion
Dress and section squirrel!. Soak in salt water until free of blood!. Roll in flour and fry in skillet with enough grease to bubble around each piece of meat!. Over each section of squirrel, shake salt, pepper, meat tenderizer and herb seasoning!. Fry each side until tender and golden brown!. After each side is browned, turn heat down and add a glass of water to skillet!. Cover with a tight lid and steam until tender with dried red pepper and onion!.Www@FoodAQ@Com

Flour that meat real good!. Use some seasoned salt in there!. Brown them pieces real good on all side!. Remove them critter and make a roux!. Add back them critter and pour some water or stock over them!. Let them simmer till tender!. Serve on dry white rice or open faced on split cat head buscuits!. Mighty good fer breakfast!.
