Cheese and Onion Pie (#2)
600 grams cheddar cheeze (medium or old), shredded
4 medium to large onion, chopped
pastry for upper and lower crusts
Boil onions in a little water!. When transparent, drain, reserving the liquid!. Mix shredded cheeze into HOT onions!. If mixture seems a little dry, add a LITTLE of the reserved stock (the remainder can be frozen for soup stock)!.
Pour mixture into unbaked pie shell and cover with pastry top!. Bake at 350 F until shell is golden brown!. Serve hot or cold!. Excellent with a salad and Branson pickle!.
Note: If you have too much mixture for your pie shell, mix a bit of dry mustard in it and spread over toast for a "mock" Welsh Rarebit!.

We have this on sunday mornings with back bacon and fruit on the side!.

Pastry Crust
1 cup all-purpose flour
1 tablespoon butter
1 tablespoon corn oil
2 tablespoons water, cold
Filling
1 tablespoon butter
1 large onion
3 large eggs
4 tablespoons whipping cream
4 tablespoons grated gruyere cheese
PASTRY CRUST:
Sift the all purpose flour into a mixing bowl!.
Combine with the corn oil, butter and a dash of salt!.
Mix well until the texture resembles bread crumbs!.
Add the cold water, and mix well to form a dough!.
Knead lightly and refrigerate for 20 minutes!.
FILLING:
Chop the onions into cubes!.
In a frying pan, saute the onions in butter!.
Set aside!.
In a mixing bowl, beat the eggs well!.
Add the cream and grated gruyere cheese and mix well!.
QUICHE:
Roll out the pastry dough in an 8-inch round baking dish!.
Spread the fried onions on the bottom of the pastry crust!.
Pour in the egg and cheese mixture!.
Bake in a preheated oven for approximately half an hour, until the filling has set!.
Temperature of oven should be set at 400 degrees!.
Garnish with chopped chives or parsley!.

2 lg!. onions, thinly sliced
2 tbsp!. butter
1/2 lb!. grated Swiss cheese
1 tbsp!. flour
1/2 tsp!. salt
3 eggs
1 c!. milk or light cream
1/8 tsp!. pepper
Prepare unbaked pie shell!. Start heating oven to 400 degrees!. Saute onions in butter; turn into pie shell!. Toss grated cheese with flour, sprinkle over onions!. Now, with eggbeater, beat eggs well!. Stir in milk or cream, salt and pepper!. Pour over cheese!. Bake pie at 400 degrees for 20 minutes!.
Now, reduce oven heat to 300 degrees and bake 25 minutes longer or until knife inserted in center comes out clean!. Serve pie hot in wedges!.
OR
ONION - CHEESE PIE
Pastry for 9" pie
2 tbsp!. butter
1 c!. thinly sliced onions
3 eggs, slightly beaten
1/2 c!. grated cheese
2 tsp!. prepared mustard
1 1/2 tbsp!. flour
1 can cream of mushroom soup
1/2 c!. milk
Line pie plate with pastry!. Saute onions until tender, not brown!. Spread over pastry!. Sprinkle with grated cheese!.
Blend all other ingredients together!. Pour over onions and cheese!. Bake at 350 degrees for 45-60 minutes!. Test with a knife for doneness!. Egg beaters can be used in place of eggs!.
OR
ONION AND CHEESE PIE
1/2 lb!. Swiss cheese, grated
1 lg!. onion, sliced
1/2 recipe of pie crust
2 tbsp!. flour
4 eggs, lightly beaten
1 c!. heavy cream
1 c!. milk
1/2 tsp!. curry powder
1/4 tsp!. ground nutmeg
Tabasco sauce
1 tsp!. salt
Black pepper
Roll pie crust 1/8 inch thick and line 10 inch pie plate with it!. Flute the edges of the crust!. Mix cheese thoroughly with flour and spread in bottom of pie shell!. Separate onion slices into rings and arrange rings on cheese mixture!. Beat eggs lightly!. Beat in cream, milk, curry powder, nutmeg, 2 drops Tabasco, salt and pepper!. Pour egg mixture over cheese and onion rings!. Bake in moderate oven (350 degrees) for 45 minutes!. Serves 6!.
