Answers:
I hate to heat up the oven in the summer time, but I love to take advantage of the fresh fruit in season!. These are just a few fruit salad recipes you can serve this summer in place of dessert, on a buffet or for a luncheon treat!.
Minted Fruit Salad:
Ingredients:
1/2 cup sugar
1/3 cup orange juice
1/3 cup lemon juice from concentrate
1/3 cup water
1/4 tsp!. peppermint extract
8 cups cut up assorted fresh fruit
Fresh mint leaves for garnish (optional)
In medium bowl, combine all ingredients except fruit; stir until sugar dissolves!. Place fruit in large shallow dish; pour lemon juice over!. Cover, chill 3 hours or overnight, stirring occasionally!. Refrigerate leftovers!.

Layered Fruit Salad
Fruit:
2 cups cubed fresh pineapple
1 pint fresh strawberries, hulled and sliced
2 kiwi fruit, peeled and sliced
3 medium bananas, sliced
2 oranges, peeled and sectioned
1 cup seedless grapes
1 pint blueberries
Sauce: 2/3 cup fresh orange juice
1/3 cup fresh lemon juice
1/3 cup packed brown sugar
1/2 tsp!. grated orange peel
1/2 tsp!. grated lemon peel
1 tsp!. pure vanilla extract

In a sauce pan, bring to boil all ingredients for sauce except vanilla; simmer 5 minutes!. Add vanilla and cool!. Meanwhile, in a large clear glass salad bowl, arrange fruit in layers in order listed!. Pour sauce over fruit!. Cover and refrigerate several hours!. 10-12 servings!.

Golden Fruit Salad
Ingredients:
1 1/2 cups vanilla yogurt
2-3 tablespoons orange juice
dash nutmeg
1 Golden Delicious apple, cored and sliced
1 Red Delicious apple, cored and sliced
1 banana, sliced
1/2 cup red grapes, seeded and halved
Combine yogurt, orange juice, and nutmeg in bowl and mix!. In another bowl, combine and mix fruit!. Serve with dressing on salad plates lined with lettuce!. Serves 3!.

Sunny Summer Salad
Ingredients:
2 pears, sliced
1 cup strawberries
2 oranges, peels left on
2 kiwi fruits, peeled and sliced
colorful greens such as radicchio, and butter lettuce
1/4 cup toasted coconut
Dressing:
1 1/2 cups plain yogurt
2 tablespoons mayonnaise
2 tablespoons honey

Cut orange slices into wedges!. On 4 salad plates, arrange greens and all fruits into a design!. Top with coconut!. Serve the honey dressing on the side!. Dressing: Mix well!. Garnish with fresh mint!.

Tropical Blueberry Salad
Ingredients:
1/4 cup firmly packed light brown sugar
1/2 cup orange juice
1 tsp!. vanilla extract
2 cups fresh blueberries
2 cups fresh or canned pineapple chunks
1 mango, peeled, pitted and cubed (about 1 1/2 cups)
1 kiwi, peeled, halved lengthwise and thinly sliced (about 1/2 cup)
In a microwaveable bowl, combine brown sugar, orange juice !. Microwave on high 1 minute!. Stir until sugar is completely dissolved!. Add vanilla!. In a large bowl, combine blueberries, pineapple, mango and kiwi!. Stir in sugar-orange juice mixture until blended!. This can be served in pretty bowls, or you can top slices of pound cake, angel cake or biscuits with it!. Adapted from a North American Blueberry Council recipe!.

Gingered Fruit Salad
Ingredients:
2 oranges, peeled and sectioned
2 apples, cored and chopped
2 peaches, sliced
1 cup strawberry halves
1 cup vanilla or peach yogurt
2 tablespoons packed brown sugar
1/2 tsp!. ginger
In a large bowl toss fruit!. In a small bowl toss other ingredients!. Blend well with wisk!. Toss with fruit!. Serves 8!.

Cherry Fruit Salad
Ingredients:
2 cups fresh sweet cherries, pitted
1 small fresh pineapple, pared and cut into segments
1 orange, peeled and cut up
1/2 small honeydew melon, cut into spears
1/4 cup toasted almond slices
Dressing:
1/2 cup plain yogurt
3 tablespoons orange juice
2 tablespoons mayonnaise
1 tablespoon lemon juice
1 tablespoon sugar
1 tsp!. orange peel

Arrange fruit on serving dish, sprinkle with almonds!. Serve with dressing!. Serves 4!. Dressing: Combine all but peel, blend until smooth!. Sprinkle with orange peel!.

FRESH FRUIT SALAD IN CHAMPAGNE

1 golden delicious apple, quartered
1 pear, quartered
1 orange, peeled and sectioned
1/2 red or pink grapefruit, peeled and sectioned
1/4 cup green seedless grapes
1/4 cup red seedless grapes
1 tablespoon honey (optional)
Champagne, enough to cover individual servings

Wash fruit, remove peels, cores, seeds, etc!. Section citrus!. Cut all fruits into bite-sized pieces!. Combine all fruits in a small bowl and toss gently with honey (fine turbinado or 10X sugar may also be used)!.
Chill for 30 minutes before spooning into decorative individual serving dishes or champagne glasses, filling only half the glass!.

Fill the remainder of the glass with chilled champagne!. Pink champagne adds color to the mix, but any champagne will be as festive!.

When serving in champagne glasses, garnish the edge of the glass with a slice of lemon or orange and dip the rim of the glass in colored sugar!.

If serving in bowls, top with a sprig of mint and a dollop of whipped cream!.

OR

COCONUT FRUIT SALAD

3 bananas
2 Gala apples
1 can of sliced pineapple (in its own juice)
coconut
pecans

Drain pineapple!. Slice bananas, apples and pineapple to desired thickness!. Combine in a serving bowl!.
Add desired amount of coconut and chopped pecans to top it off!.

OR

SWEET FRUIT SALAD

1 tablespoon white sugar
1 cup canned pineapple
1 regular size pkg!. Jello
1 packet Knox gelatine
1 cup apples, chopped
1 medium size can Mandarin oranges
1/2 cup grapes
1 cup peaches, chopped
1 cup apricots, chopped
1/2 cup strawberries, chopped
1 cup mangoes, chopped

Combine gelatine and Jello and sugar in a small bowl, mixing well!. Add three cups boiling water and stir until dissolved!.
Drain syrup from canned fruits and measure out 1/2 cup!. In a medium bowl, mix the syrup, pineapple, apples, oranges, grapes, peaches, apricots, strawberries, and mangoes!. Stir in Jello mixture!. Refrigerate for 3 hours or leave overnight before serving!. Serve with Cool Whip and a sprig of fresh mint as a garnish!.

Tropical Fruit Salad with Fruit Vinaigrette
INGREDIENTS

* 1 small pineapple, peeled and diced
* 1 papaya, peeled and diced
* 1 mango, peeled and diced
* 2 small bananas
* 1/3 cup NAKANO? Seasoned Rice Vinegar - Original or Red Pepper
* 1 tablespoon honey
* 1/8 teaspoon allspice
* Salt and white pepper
* 2 kiwi fruit, peeled and diced
* 1 cup strawberries or grapes, cut into halves
* 2 tablespoons chopped red onion
* 2 teaspoons chopped fresh mint leaves

DIRECTIONS

1!. Place 1/2 cup each pineapple and papaya, 1/4 cup mango, and one peeled banana in blender container!. Add rice vinegar, honey and allspice; blend until smooth!. Season to taste with salt and pepper!.

2!. Place remaining pineapple, papaya and mango, plus kiwi fruit and strawberries in a large bowl!. Slice remaining banana; add to bowl along with onion and mint!. Pour about 1/2 cup vinaigrette over fruit; toss gently to coat!.

Strawberry-Sauced Crunchy Fruit Salad
INGREDIENTS
* 2 1/2 cups crispy rice cereal
* 1 1/2 cups chopped hazelnuts
* 3/4 cup packed brown sugar
* 1/2 cup margarine, melted
*
* 1 pound fresh or frozen sliced strawberries
* 1/3 cup orange juice
* 2 tablespoons confectioners' sugar
* 1 tablespoon vanilla sugar
*
* 2 Red Delicious apples, cored and diced
* 2 Golden Delicious apples, cored and diced
* 2 Granny Smith apples, cored and diced
* 4 seedless oranges, peeled and diced
* 1 (20 ounce) can crushed pineapple, drained

DIRECTIONS

1!. Preheat the oven to 350 degrees F (175 degrees C)!. Place the rice cereal and nuts into a baking pan!. Stir in the brown sugar and margarine!. Bake for 10 to 15 minutes, until toasty!. Stir occasionally!. Set aside to cool!.

2!. In the container of a blender or large food processor, combine the strawberries, orange juice, confectioners' sugar and vanilla sugar!. Puree into a smooth sauce!. Set aside!.

3!. To make the salad, toss the red, green and yellow apples with oranges and pineapple in a large serving bowl!. Sprinkle with the nut crunch and spoon strawberry sauce over the top!. Or you can serve the toppings on the side!.

Lemony Fruit Salad

INGREDIENTS

* 1/4 cup sugar
* 1/4 cup lemon juice
* 2 teaspoons grated lemon peel
* 1 1/2 teaspoons poppy seeds
* 4 medium apples, diced
* 1 (11 ounce) can mandarin oranges, drained
* 1 large carrot, grated
* 1/2 cup raisins
* Lettuce Leaves

DIRECTIONS

1!. For dressing, combine the sugar, lemon juice, lemon peel and poppy seeds in a small saucepan!. Cook over medium heat for 5-6 minutes or until sugar is dissolved, stirring occasionally!. Remove from the heat; cool!.

2!. In a large bowl, combine the apples, oranges, carrot and raisins!. Add dressing and toss to coat!. Cover and refrigerate for 4 hours!. Serve in a lettuce-lined bowl if desired!.

Five-Cup Fruit Salad

1!. Ingredients1 (8!.25 ounce) can DOLE(R) Pineapple Chunks, undrained
1 (11 ounce) can DOLE(R) Mandarin Oranges, drained
1 (8 ounce) container BREAKSTONE'S or KNUDSEN Sour Cream, any variety
1 cup BAKER'S ANGEL FLAKE Coconut
1 cup JET-PUFFED Miniature Marshmallows



2!. Cooking Directions
Drain pineapple, reserving 1 Tbsp!. of the juice!.
Mix pineapple, reserved juice and remaining ingredients; toss lightly!. Cover!.

Cut up fruit and put it in a bowl - don't add sugar or anything else!. Just be sure to combine the right fruits together:) Summer fruits are melons, berries, pineapple, kiwi, grapes, papaya, mango - but apples and pears don't taste right with those!. Winter fruit salad could be apples, pears, and grapes !.!.!. or do a Winter Citrus salad with oranges, tangerines, pineapple chunks (from a can), grapefruit slices (you can even sprinkle some coconut on it)!.!.!.!.!.!.Www@FoodAQ@Com

I mix an 8 oz pkg of cream cheese with a large container of Kool whip and set aside!.

Peel, slice or open cans and make sure they are VERY well drained or your salad will get mushy!. If you use bananas dip them in lemon juice to keep from browning!.

I use sliced pears, peaches, apricots, mandarin oranges, marachino cherries, thinly sliced apples, sliced bananas, grapes and just mix them into the Kool whip mixture!. If strawberries are in season they make a great addition but I don't use the frozen ones as they are too much liquid!.

You can also add a 1/2 bag of mini marshmallows if you want it more a dessert salad then just salad with the meal!.

Everyone always raves about this and it is so simple!.

Ingredients
Tart apples (diced)

Action
a!. Mix all the fruits together!.
b!. Add nuts and dates!.
c!. Mix lightly with the fluffy whipped cream!.


Apple Salad Two
Ingredients
1 cup Rolled Oats
1 tablespoonful mixed nuts (Almond, sunflower seeds, and
melon seeds)
1 Apple (cubes)
Molasses
Lemon juice
Raisins

Action
a!. Wash and drain the oats and nuts!.
b!. Soak them in room temperature water, just enough to cover!.
c!. Place it in the refrigerator over night!.
d!. Mash the nuts in the food processor!.
e!. Mix all together!.

Strawberry Salad One

Ingredients
Sweet thin skinned orange
Strawberries
nutmeg
Powder sugar

Action
a!. Wash the orange thoroughly, and cut into slices!.
b!. Strawberries must be hulled and wash and wiped dry!.
c!. On top of the orange slices, pile the strawberries!.
d!. Dust with sugar and nutmeg!.

Strawberry Salad Two

Ingredients
Fine rope strawberries
Lettuce leaves (chopped)
Lemon juice
Cream mayonnaise
1 whole berry

Action
a!. Stem and wash the berries!.
b!. Drain and chill!.
c!. Arrange in small cups made of lettuce leaves, filling
partially full!.
d!. Sprinkle with lemon juice, and cover with mayonnaise!.
e!. Place on top of each salad a large berry!.


Fruit Salad Mix

Ingredients
220g sugar
80 ml cold water
250 ml boiling water
1 packet of agar agar powder
2 bananas
2 oranges
3-4 cherries, for flavor
1/2 can pineapple (drained)

Action
a!. Dissolve agar agar powder into cold water!.
b!. Dissolve sugar in the boiling water!.
c!. Pour the sugar water into agar agar water, and mix well!.
d!. When the water is cool, add the fruits and cherries!.
e!. Mold in sherbet glasses!.
f!. Serve on a lettuce leaf with mayonnaise dressing!.

Note: This may also served as a dessert with whipped cream!.


Grapefruit Salad

Ingredients
1 large grape fruit
2 large sweet apples
French dressing
Lettuce cups
White grapes (skinned and seed removed)
Chopped nuts

Action
a!. Remove pulp from the grape fruit in small pieces!.
b!. Pare, core and chop the apples!.
c!. Put grape fruit and apples together, and mix with dressing!.
d!. Chill on ice!.
e!. Serve in lettuce cups and garnish with grapes and nuts!.


Pineapple Salad

Ingredients
1 small ripe pineapple (shredded)
200g crispy white celery (finely chopped)
1 red pepper (diced)
1 tablespoon French dressing
1 tablespoon mayonnaise
1 tablespoon whipped cream
Some lettuce leaves and nut meats

Action
a!. Chill the pineapple thoroughly on ice!.
b!. Mix pineapple with celery, and peppers!.
c!. Sprinkle over this, the French dressing,
and let it stand for a few minutes!.
d!. Mix the mayonnaise and whipped cream,
and serve with garnish of lettuce leaves and nut meats!.


Pear Salad

Ingredients
Fresh pears or canned pears (halved)
Dates (grounded)
Nuts (grounded)
Cherries (grounded)
Salad dressing
Mild cheese (grounded)
Whole cherries

Action
a, Fill center of the pears with a mixture of dates, nuts,
cherries, and dressing!.
b!. Sprinkle cheese over the whole and garnish with,
whole cherries!.


Avocado and Shrimp

Ingredients
1 avocado
8 medium-sized shrimps (cooked and shelled)
1 tablespoon garlic sauce
1 teaspoon soy sauce
1/4 teaspoon lemon juice
4 tablespoons mayonnaise

Action
a!. Season shrimps with garlic, and soy sauce, for 5 minutes!.
b!. Cut avocado vertically into halves, and remove stone!.
c!. Sprinkle with lemon juice!.
d!. On top of the avocado, place shrimps and dressing!.


Banana Salad

Ingredients
1 Banana
4 lettuce leaves
Some chopped celery
Some nuts
Salad dressing

Action
a!. Cut the banana into 4 pieces!.
b!. Put each on a lettuce leaf, and cover with celery and nuts!.
c!. Cover lightly with dressing!.

Ingredients
2 medium cans of pineapple tidbits
6 oz can or orange juice, frozen
1 package instant lemon pudding
3 bananas, sliced
1 can pears, 2 1/2 lb!.
2 1/2 lb can of apricots
2 1/2 lb can of peaches
1 can mandarin oranges, drained


Directions

Drain pineapple and dissolve orange juice in pineapple juice!. Mix in
juice instant pudding, sliced bananas, pears, apricots and peaches
(in bite sizes!.) Add drained oranges and pineapple!. Mix and let
