There is an expression in French households about the first crepe off the grill is for the dog!.
I do not know why this is, but its true!. For this reason, I make one pancake first, followed by batches of four until I'm done!.

I have no idea, but, have noticed the same thing! The last ones you cook are always better!. Maybe the first ones do absorb more oil or maybe it is the griddle not being hot enough!. It's pretty frustrating to say the least!.Www@FoodAQ@Com

The grease/butter/oil in the griddle makes those spots on the pancake!. Instead of greasing the griddle try adding some olive oil ot the batter!. It's healthier that butter too!.Www@FoodAQ@Com

The first batch usually soaks up some of the excess oil and adjusts the temperature to about what it should be!.!.!. Www@FoodAQ@Com

Because the griddle is heated evenly!. I use an electric griddle and preheat it!.Www@FoodAQ@Com
