Help, my jelly is not setting?!


Question: Help, my jelly is not setting!?
I made muscedine grape jelly with only 2 quarts of grapes!. I added 1 package of liquid pectin!. It has been 4 days in the fridge and it has not set!. What did I do wrong!. I noticed that when I spilled some on the counter it became firm, so I know it has the potential to firm up!. Help please!

I have had this happen also!. Boil the jelly again ( to a rolling boil ) for 1 min!. Be sure it is to a rolling boil that will not stir down!. then reseal in sterile jars with new lids!. I usually let mine boil until I can dip the spoon in and then hold it up and watch the jelly drip off the spoon!. If it hangs on to the side of the spoon in a tear shaped glop then it is ready!. Just something I learned after making jellies for 20 years!.Www@FoodAQ@Com

Could be due to lack of pectin or acid or insufficient sugar, under- or overcooking or boiling too slowly!. If slightly soft, leave unsealed in a sunny spot for a few days to allow for some evaporation but if very runny, re-boil rapidly!.Www@FoodAQ@Com

pectin either not enough natural,or not cooked proper temperature per recc!. time for sugars to convert viscosity,,,some fruits/peppers fluctuate pectin levels throughout the season!.Www@FoodAQ@Com
