I've seen potatoes eaten with liquid cheese . How to turn cheese into liquid ?!

It's sometimes called chilli con queso, especially in Mexican cooking - they serve a hot cheesy dip with nachos etc!.
It's one of my favourite things in the world - except it is terribly bad for you if you eat it in vast quantities!!
You need to make a roux first, with milk, flour and butter!. (Check online for quantities)!. First you melt the butter, then add in the flour, and cook it stirring ALL the time so the flour cooks, but doesn't stick to the pan!. If you don't stir it, it will stick and end up useless!. Then gradually add in the milk (warm milk works faster but cold is fine!.!.!.)!. You can use many different types of cheese - hard cheeses tend to work well, so perhaps if you're worried about calories, use a strong half fat cheddar (mature - dont go for mild or tasteless cheese)!. You can use emmental, or gouda, or whatever hard cheese you like!.
also add chilli peppers, tomatoes, green capsicum etc, or just buy a jar of salsa - hot or mild, depending on your tastes!. Then mix it up, keep stirring until nearly bubbling - but again, don't let it stick to the pan or it will burn!.
It's great served with nachos, or potatoes/wedges, or with croudites like carrots, cauliflower, celery, and even slices of apple!.

The runny cheese is made with a lot of fat which becomes oily under heat!. Gag!.
Try this: take some grated parmesan (the kind in a shaker) and stir it into some olive oil or sour cream or milk on medium heat!. Parmesan is very cheesy tasting!. If you want the yellow color, stir in some powdered cheddar cheese!. Alternatively, look in any cookbook for a potatoes au gratin recipe!. Or yet again -look for cheese soup!.
