Healthier alternative to cream soups?!


Question: Healthier alternative to cream soups!?
I need something I can use when a recipe (usually a casserole) calls for a cream of mushroom or cream of chicken soup that has less fat and sodium than normal!. I use Campbell's Healthy Requests sometimes but the sodium content is still quite high and they are expensive!. Any other brand you like or homemade substitution you have to offer that would still work in a casserole!?Www@FoodAQ@Com

You could make your own using light skim milk, and no/low sodium chicken bullion cubes!.

Basically just make a thick chicken gravy and add chopped celery, mushrooms, chicken bits, broccoli etc!.!.!.!.

You could also add a little non or reduced fat cream cheese to the gravish type soup for a little extra creamy texture and body!. If you make it real thick then add equal parts milk like your casserole calls for or make it a normal creamy soup texture and don't add extra milk!. It's your choice!.Www@FoodAQ@Com

You can make a simple cream sauce by cooking a little flour with some oil or butter for a few minutes, then whisk in half milk and half water gradually to get the right consistency!. Generally speaking, 1 tablespoon each of fat and flour should thicken 1 cup of liquid, but I never measure anything! This will give you a simple base for casseroles, but it doesn't have a lot of flavor, so make sure you taste and season to make up for it being a bit bland!.Www@FoodAQ@Com

For cream of mushroom soup ,you can substitute low fat or fat free sour cream!. Saute chopped mushrooms (and a little onion if you like) in a little butter, mix in w/sour cream!. You could stir in a little beef or chicken base for a little more flavor if you think your recipe would benefit from it!.Www@FoodAQ@Com

Try using yoghurt perhaps instead of cream!?Www@FoodAQ@Com

I've been using broth instead and it's worked out in most recipes!.!.
