You could do a salad or another vegetable!. Stuffed peppers are a meal in their-selves with hamburger and rice and tomato sauce!.

If you are stuffing the peppers with a rice and meat mixture, then just serve with some steamed vegetables with a creamy, garlic sauce and flat bread!. If no meat in the stuffing, then serve with strips of chicken also in the sauce!. I find that that goes really well with peppers or capsicums as we call them in Australia!.You can always leave the garlic out if the family doesn't like it and add a couple of teaspoons of tomato paste to the sauce!.Www@FoodAQ@Com
How about cheese potatoes!? They go great with anything!. They are super easy to make and really delicious!.

I wouldn't do anything!. You have the peppers, rice and sausage stuffing!. You have a complete meal in one pepper!. I would make some garlic mozzarella bread and that's it!. Www@FoodAQ@Com
Growing up we always made it with mashed potatoes and corn!. We took a can of whole kernel corn, drained it, and mixed it with a can of cream style corn!. It's delicious!. A real comfort food! Www@FoodAQ@Com
I make stuffed peppers (with rice and meat) at least three times a month, and my hubby likes good old shells and cheese with it!. Good every time!Www@FoodAQ@Com
