Why does my lasagna always fall apart?!
I usually add eggs to the ricotta and use very little red sauce, but it always seems to fall apart when I try to cut it and serve it!. Any tips!?Www@FoodAQ@Com

make it the day before!.
when i make lasagna i only cook the noodles half way
and use extra water in the sauce,,
then cook it for about 30 mins and then put it in the fridge
then the next day i put in in the oven at 400 for at least an hour depending how large a pan you made!.!.should be at around 140 degees
when its done,, let it rest for 20 mins before serving
you will be able to cut it and should hold together better

No egg!. Chop the tomatoes to make a unique topping that doesn't slide and will be supported, rather than a tomato paste substance!. Parmesan cheese, mixed with a bit of mozzarella (very well mixed) instead of ricotta!. Or if you must have ricotta, put some mozzarella toward the center and outsides of the cheese layer and between each layer!. Can't just place the stuff upon each layer, but artfully consider how each bit goes on!.
If you bake it in a deep dish or deep tray, cut straight down with like, a cake knife or bread knife!. This technique will help it not go apart or slide away!. I don't know if any chefs recommend that, but it works!. Scoop each serving with the same thing you use to serve pie slices and cake slices!. Www@FoodAQ@Com

Do you cut it IMMEDIATELY after taking it out!? You have to let it sit!.
also, use a VERY sharp knife, and don't use a bad knife because it will press into it and make it nasty!. Plus, lasagna is kind of like that anyways!. Use a spatula too!.Www@FoodAQ@Com

Are you layering it correctly!? In my lasagna I layer it beginning with my meat and sauce together, followed by ricotta, and then cheese, and continue!. Try making sure your layers are coming together properly!. Www@FoodAQ@Com
Use only 1 egg and add some shredded mozzerella and grated parmesan cheese to the ricotta mixture, and allow it to cool slightley before cutting!.!.!.and maybe less sauce!.Www@FoodAQ@Com
A couple of things might be happening!. Are you layering properly!? Are you cutting into the lasagna before letting it rest 10 minutes!? Maybe you need a little more cheese!?!?Www@FoodAQ@Com
i have to agree with the let it cool there is no real way to make lasagna so just go with your gut yes let it cool more before you cut it Www@FoodAQ@Com
