Question: The "Perfect" Christmas Dinner!?
I'll be going home for Christmas this year after nearly all year away from it in the R!.A!.F (Armed Forces) and i'll probly be doing a few dishes here and there

any ideas on what to have for the perfect christmas dinner!?
i fancie doing a few Italian meals because alot of the family will be roundWww@FoodAQ@Com

Hi Steve, from an Italian Aussie living In Montreal Canada, I have fallen in love with a white Christmas Lunch, but getting tired of the old turkey!. Can I suggest to you, what I am doing this year!?

Antipasto Calabrese

Glazed Leg of Baked Pork with the vegies, the gravy will be the wine reduced pan juices, apple sauce and cranberry will be available,

Mixed Salad with lightly grilled fennel thrown in with a dressing as follows!.

3 tbls of Balsamic

2 Extra Virgin olive oil

1 teaspoon dijon mustard

Squeeze of lemon juice

S & P mix well and add to salad

Tiramisu with a good drop of alch!. in it

Finished with a good expresso coffee

I'm having both red and white wine!.

All very simple to prepare!.

For our small family in Ohio, I make a marinated beef eye of round roasted in the oven (or do it on the grill if we don't have a lot of snow!) with Yorkshire Pudding, twice baked potatoes, steamed asparagus or some other nice veggie depending upon what's available and a nice (spinach) salad!. And then the dessert is my grandmother's recipe for fruit salad with an assortment of the Christmas cookies I've baked!.

If you're thinking Italian, lasagna or stuffed shells is always good!. And maybe antipasto salad!.

Get some rosemary skewers, stalks, sticks or whatever you call `em there and stick them through a boneless leg of lamb!.
Peel and crush 2 pounds of garlic!. Yes, 2 pounds!.
Lay out a strip of cheesecloth long enough to wrap completely around the roast at least twice or get a thin cotton mesh bag like the ones used for shellfish!.
Lay the roast on the cheesecloth, completely coat with garlic and wrap it up tight!.
Run the works through with a rotisserie spit rod and mount for roasting!. As it starts to heat drizzle some toasted sesame seed oil on the cheesecloth!. Enough to make it run down the side as the roast turns!. The idea (and it's very well tested and tried) is to roast the the meat in this solution of garlic infused sesame seed oil while it's turning and exposed to the heat source!.
Try this once and you will never cook leg of lamb any other way again!.

Standing rib roast
Mashed potatoes
Fresh steamed green beans with toasted almonds and butter
Christmas cookies
Custard pie with fresh fruit
homemade chocolates

If you really want to do italian for xmas, my friend is very italian, and this is what she serves up:
Fried chicken
Cheese Lasagne
Meatballs in marinara sauce
Antipasto tray
Steamed zucchini/yellow squash
Tiramisu
Cannoli

I usually have a bird of some sort for christmas dinner, in some form or another (Quail, duck, cornish hen, turkey, chicken!.!.!.), and for most of these, I use Alton Brown's brine!. I variate it for different things, because it's meant originally for Turkey, but it always goes over well!.Www@FoodAQ@Com
