PUMPKIN SEEDS

1 1/2 tbsp!. butter
1/2 tsp!. Worcestershire sauce
1 1/2 tsp!. salt
2 c!. pumpkin seeds
Cookie sheet

Mix all ingredients and coat and mix pumpkin seeds!. Bake at 250 degrees for 2 hours or until crisp, stir occasionally

OR

SPICY ROASTED PUMPKIN SEEDS

3 c!. pumpkin seeds
1 tsp!. ground cinnamon
1/2 tsp!. ground cloves
1/2 tsp!. nutmeg
Salt to taste

Clean pumpkin seed and allow to dry at least 3 hours!. Spray a flat non-stick cookie sheet with Pam!. Spread pumpkin evenly on pan and sprinkle with seasonings!. Bake at 375 degrees for 15 to 20 minutes, stirring several so seeds do not stick or burn!. Watch carefully!. Test with fork to see if done; when crunchy remove from oven!.

OR

PUMPKIN MUFFINS WITH PUMPKIN SEEDS

2 c!. all-purpose flour
3/4 c!. packed brown sugar
2 tsp!. baking powder
1/4 tsp!. baking soda
1/2 tsp!. salt
1 tsp!. cinnamon
1/4 tsp!. powdered ginger
1/8 tsp!. ground cloves
Dash ground nutmeg
1 c!. canned pumpkin
1/3 c!. melted butter, cooled
2 lg!. eggs, room temp!.
1/4 c!. buttermilk, room temp!.
2 tsp!. vanilla
1 c!. + 2 tbsp!. pumpkin seeds

Heat oven to 400 degrees!. Grease muffin pan!. In a bowl mix flour, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, cloves, nutmeg!. In another bowl mix pumpkin, butter, eggs, buttermilk and vanilla!. Make a well in dry ingredient mixture, add milk mixture and stir well!. Add 1 cup of pumpkin seeds!. Fill muffin tin with mixture and sprinkle tops with remaining pumpkin seeds!. Bake 15 to 20 minutes!.

OR

TROUT WITH PUMPKIN SEED BROWN BUTTER

1/2 c!. buttermilk
1 c!. all purpose flour
2 (8-10 oz!.) boneless whole trout
2 tbsp!. vegetable oil
6 tbsp!. (3/4 stick) butter
1/4 c!. unsalted pumpkin seeds
2 tbsp!. cider vinegar
2 tbsp!. chopped fresh chives or green onion tops
Pumpkin-Corn Pudding

Pour buttermilk into large bowl!. Place flour in another large bowl!. Dip trout in buttermilk!. Season trout with salt and pepper!. Open trout and dredge both sides in flour, tapping off excess!.
Heat 1 tablespoon oil in heavy large skillet over medium high heat!. Place 1 trout flesh side down in skillet!. Cook until golden, about 4 minutes!. Turn and cook skin side down until crisp, about 5 minutes!. Place on plate and keep warm!. Repeat with remaining oil and trout!.

Add butter to same skillet and cook until golden, about 2 minutes!. Stir in pumpkin seeds and cook 1 minute!. Add vinegar and bring to boil!. Spoon sauce over trout and top with chives!. Serve with Pumpkin-Corn Pudding, if desired!.

you can take them out of the pumpkin and just let them bake until they are brown around the edges!. Then put TONS of melted butter and salt in with the pumpkin seeds and stir the butter and salt in!. I love these kind of pumpkin seeds!. Or you can do the same thing but put a little less butter in and put cinnamon in!.Www@FoodAQ@Com
