Question: Sugar free Key lime Pie!?
Does anyone know any good recipes for Sugar free key lime pie!. My mom is diabetic and I want to make her something special without making her sick!.

For Filling:

1 packet Knox unflavored gelatin

3 tablespoons lime juice

1/2 cup boiling water

9 - 1gram packets Equal or similar

For Crust:

1-9-inch graham cracker

Lime zest

Thin lime slices

1 cup evaporated skim milk

1 teaspoon vanilla

Juice of 1-1/2 limes

2 drops green food coloring

Sprinkle gelatin over lime juice and let it stand for 1 minute!.

Add boiling water and sweetener to gelatin mixture and stir until gelatin is dissolved!. Refrigerate about 45 minutes or until slightly thickened!.

Combine milk and vanilla and freeze 30 minutes!.

Remove from freezer and whip at high speed until stiff!.

Stir lime juice and food coloring into whipped milk!. (Save remaining 1/2 lime for garnish!.)

Slowly blend gelatin mixture into whipped milk!. Spoon pie filling into crust!. Chill until firm!.

Garnish with lime zest and lime slices!. Cut into 8 even portions and serve 1 portion per serving!.

Yield: One 9-inch pie, 8 servings

*SUGAR FREE KEY LIME PIE:
1 graham cracker pie crust
1 - 8 ounce block of FAT FREE cream cheese (Yes, fat free cream cheese tastes like wallpaper paste (don't ask me how I know this!.!.!.) BUT, you'll never know that it's fat free in this recipe!)
1 cup of skim milk
1 small box of sugar free lime gelatin
1 large container of fat free whipped topping
a few packets of no calorie sweetener
Whip up the cream cheese and milk until fluffy, then add the packet of gelatin (powder only! Do NOT mix with water!)!. also add a few packets of no calorie sweetener to suit your personal taste!. Mixture will be very fluffy and green!.Next, carefully FOLD in 1/2 the container of softened whipped topping!. Chill until set, then top pie with remainder of topping!. The juice of one real lime adds a distinctive taste, as does a teaspoon
of grated rind!.Serves 8 for about 250 calories per slice!.
-----Tip: Make strawberry pie by substituting strawberry gelatin and a few fresh strawberries OR orange pie by using orange gelatin and drained mandarin oranges!.

********5 Minute Sugar-Free Key Lime Pie
1 (4 ounce) box lime sugar-free gelatin
1/4 cup boiling water
2 (8 ounce) containers Key lime yogurt
1 (8 ounce) container sugar-free Cool Whip
1 prepared shortbread pie crust
Heat water in microwave in measuring cup until boiling!. Add gelatin, stirring with fork until dissolved!. Pour gelatin into large bowl!. Add yogurt, and whisk together until smooth!. Add container of sugar-free Cool Whip; stir until smooth!. Pour into prepared shortbread pie crust or, to skip additional calories or carbs, serve in dessert cups!.
Refrigerate 2 hours or overnight before serving!.Garnish with additional sugar-free Cool Whip when serving!.

Key lime pie has condensed milk and sometimes cream cheese in it, you could find a recipe on line and just use Splenda in it instead of sugar!. Go to the American Diabetics Association and they have lots of free recipes!.

Chicken Divan

Once the signature dish of a New York restaurant, the Divan Parisienne, Chicken Divan became a party favorite!. Here, its richer elements are streamlined, without sacrificing taste!.

INGREDIENTS
1 1/2 pounds boneless, skinless chicken breast
1 tablespoon extra-virgin olive oil
2 cups diced leek, white and light green parts only (about 1 large)
1/2 teaspoon salt
5 tablespoons all-purpose flour
1 14-ounce can reduced-sodium chicken broth
1 cup 1% milk
2 tablespoons dry sherry (see Ingredient note)
1/2 teaspoon dried thyme
1/2 teaspoon freshly ground pepper
2 10-ounce boxes frozen chopped broccoli, thawed, or 1 pound broccoli crowns, chopped
1 cup grated Parmesan cheese, divided
1/4 cup reduced-fat mayonnaise
2 teaspoons Dijon mustard

Tip: To clean leeks: Trim roots and ragged tops!. Slice leeks and place in plenty of water, then drain!. Repeat a few times!. The slices do not absorb water or lose flavor!.

The "cooking sherry" sold in many supermarkets can be surprisingly high in sodium!. We prefer dry sherry, sold with other fortified wines in your wine or liquor store!.

DIRECTIONS

Preheat oven to 375 degrees F!. Coat a 7-by-11-inch (2 quart) glass baking dish with cooking spray!.


Place chicken in a medium skillet or saucepan and add lightly salted water to cover!. Bring to a simmer over high heat!. Cover, reduce heat to low and simmer gently until the chicken is cooked through and no longer pink in the center, 10 to 12 minutes!. Drain and slice into bite-size pieces!.


Heat oil in a large nonstick skillet over medium-high heat!. Add leek and salt and cook, stirring often, until softened but not browned, 3 to 4 minutes!. Add flour; stir to coat!. Add broth, milk, sherry, thyme and pepper and bring to a simmer, stirring constantly!. Add broccoli; return to a simmer!. Remove from heat and stir in 1 /2 cup Parmesan, mayonnaise and mustard!.


Spread half the broccoli mixture in the prepared baking dish!. Top with the chicken, then the remaining broccoli mixture!. Sprinkle evenly with the remaining 1 /2 cup Parmesan!. Bake until bubbling, 20 to 25 minutes!. Let cool for 10 minutes before serving!.

Make a crust using sugar-free cookies & melted butter; bake about 10 min!. at 350 and let it cool!. Beat 8 oz!. softened cream cheese with small container of sugar-free Cool Whip - then beat in either dry package of sugar-free lime jello or about 3-4 TB!. lime juice and some lime zest; put into cooled shell and refrigerate!.
