Take cauliflower and boil it!. When it is done mash it like you would mash potato and if you do not tell people it taste like mash potato also!. Just put in it what you would the potato!. Very low fat!.Www@FoodAQ@Com

My family all loves rice cooked with a little sauteed onions/peppers and then use chicken broth instead of water!. Trader Joe's even has a wild rice medley that's flavored already, just cook it with the chicken broth!.

We also love green beans, and roasted asparagus, just watch how much fat you add!. Try using minimal amount of olive oil for roasting the asparagus, and try steaming the green beans, then put some butter spray on it, salt and pepper, and you're done!.

If you really want mashed potatoes, use non fat cream cheese or sour cream!. Add roasted garlic for extra flavor!.Www@FoodAQ@Com

Roasted Herbed Asparagus
1 clove garlic, halved
? 1 1/2 pounds fresh asparagus spears
? Olive oil cooking spray
? 1/4 teaspoon dried thyme
? Salt and pepper to taste
? 1/4 cup Parmesan cheese for garnish (optional)

Preheat oven to 400 degrees!.

Rub the cut sides of the garlic over a 13 x 9 inch baking dish, place garlic in dish!.

Snap off the tough ends of each asparagus spear!. Add asparagus to dish, spray lightly with olive oil (miser or spay) Sprinkle asparagus with thyme and salt and fresh ground pepper to taste!.
Toss gently and bake at 400 degrees for 15 to 20 minutes*, stirring once!.

* If you like your asparagus crispy, cook only at 15 minutes!. If you like it more tender cook for the longer time!.

Green Beans Almandine
1 1/4 pounds fresh green beans, trimmed
? 1 teaspoon low saturated fat margarine
? 1/2 teaspoon shallot, minced
? 1 garlic clove, minced
? 1/4 cup toasted sliced almonds
? Salt
? Fresh ground black pepper

In a large pot, blanch green beans in simmering, lightly salted water for 3 minutes or until slightly tender yet firm!. Remove green beans and immediately submerge in ice water to chill thoroughly!. This step halts the cooking process allowing vegetables to retain their crispness and color!.

Melt margarine in a large sauté pan over medium heat!. Add shallot and garlic, sauté until translucent!. Add blanched green beans, almonds!.

Sauté For 3 - 4 minutes while stirring to heat through!. Season with salt and fresh ground black pepper!. Transfer to a warm serving platter or bowl to serve!.

Broccoli with Red Pepper
3 cups broccoli flowerets
? 1/2 cup diced red bell pepper
? 1 tablespoons low saturated fat margarine*
? 1 garlic clove, finely chopped
? 1 teaspoon lemon juice
? 1/8 teaspoon salt

Heat 6 cups water to boiling in 2-quart saucepan!. Add broccoli!. Heat to boiling; boil uncovered 2 minutes!.

Add bell pepper to saucepan!. Boil 1 to 2 minutes or until vegetables are crisp-tender!. Drain; remove from saucepan!.

Add butter to saucepan!. Cook garlic in butter over medium heat, stirring occasionally, until golden!. Stir in lemon juice and salt!. Return broccoli mixture to saucepan; toss to coat!.

* Best to use one of the new cholesterol lowering margarines like "Take Control"!.

Apple Honey Glazed Carrots
1 tablespoon low saturated fat margarine that you can cook with (like Smart Balance?)
? 1 - 16 ounces package peeled trimmed baby carrots
? 1 cup unsweetened apple juice
? 1 teaspoon honey
? 1 tablespoon snipped chives

Melt low saturated fat margarine in large nonstick skillet over medium-high heat!. Add carrots and sauté until carrots begin to brown slightly, about 8 minutes!. Add apple juice and honey and bring to a boil!. Reduce heat and simmer until carrots are tender and liquid is reduced to a glaze, stirring occasionally, about 15 minutes!. Season to taste with salt and pepper!. Transfer to bowl and sprinkle with chives and serve!.

Roasted Rosemary Potatoes
2 pounds red potatoes, cut into 1/4-inch-thick slices
? 1 tablespoon olive oil
? 2 tablespoons chopped fresh rosemary
? Salt and pepper to taste
? Paprika (optional)

Preheat oven to 450°F and oil 2 large baking sheets!.
Arrange potatoes in 1 layer on sheets!. Brush tops with oil and sprinkle with rosemary and salt and pepper to taste!.

Roast potatoes in upper and lower thirds of oven, switching position of sheets halfway through baking, until golden and edges are crisp, about 20 minutes!.

Season to taste with salt and pepper and paprika if desired

Sauteed Sweet Potatoes and Fruit
2 pounds sweet potatoes, peeled and roughly cut into 1 1/2-inch pieces
? 1 tablespoons light margarine
? 1 large tart apple, cored and cut into wedges
? 1 pear, cored and cut into slices
? 1/2 cup fresh cranberries
? 1/4 teaspoon ground nutmeg
? 1/4 cup honey

In large skillet, saute sweet potatoes in margarine 10 minutes, stirring often!. Add remaining ingredients!. Cover and cook 5 minutes!. Remove cover and continue cooking over medium heat until potatoes and fruit are tender, but not mushy

My husband absolutely loves this! I have to keep bags of frozen cranberries to make it all year long!.!.!.

MACADAMIA CRANBERRY RELISH
1 bag frozen cranberries
2 small jars macadamia nuts
1 small orange
1 c!. sugar
Grind cranberries, nuts & orange in food processor!. Stir in sugar and put into jars!. It will be pink, but will turn red as it "cooks" itself in the sugar!. Turn the jars over a few times a day for at least 3-4 days before eating!.!.!.!.!.!.!. also good over ice cream

Steamed veggies !.!.!. green salad !.!.!. fruit salad

We like to take frozen or fresh green beans, boil them about 6 minutes & drain well!. Saute them in a non stick skillet & olive oil with a couple teaspoons of fresh minced garlic!. Even the kids who do not like green beans will like thisWww@FoodAQ@Com
