How to make a nice thick cheese sauce?!


Question: How to make a nice thick cheese sauce!?
my mum used to make a thick cheese sauce and all my family loved it! i have not had it since i was 10 as she died 10 years and want to try and make it my self!. do any of you know how she might have made it!? she would cook it in a pan on the hob and later add mushrooms and bacon!. i think she used flour in it but not too sure!Www@FoodAQ@Com


Answers:
2 tablespoons butter
2 tablespoons all-purpose flour
1 1/4 cups milk, heated
Salt
Freshly ground pepper

Melt the butter in a heavy-bottomed saucepan!.
Stir in the flour and cook, stirring constantly, until the paste cooks and bubbles a bit, but don't let it brown, about 2 minutes!.
Add the hot milk, continuing to stir as the sauce thickens!. Bring it to a boil!. Add salt and pepper to taste, lower the heat, and cook, stirring for 2 to 3 minutes more!. Remove from the heat!.
To cool this sauce for later use, cover it with wax paper or pour a film of milk over it to prevent a skin from forming!.
Makes about 1 cup!.

For Cheese Sauce: Stir in 1/2 cup grated Cheddar cheese during the last 2 minutes of cooking, along with a pinch of cayenne pepper!.

Thick Cheese Sauce

3 tablespoons butter
3 tablespoons flour
1/2 cup grated sharp cheddar cheese
1 cup milk
salt and cayenne pepper to taste

Melt butter in saucepan or double boiler!. Add flour and blend well!. Add cheese and beat until smooth!. Slowly add milk, stirring constantly!. Cook til sauce is thick and smooth (about 4 minutes)!. Add salt and cayenne!.

The sauce is basically just a Mornay sauce!. I have also had these with a slice of tomato atop the bacon!. A Kentucky staple, with many individual variations possible!.

buy a jar of cheese whiz and put it in the microwave for a minute at a time be sure to check after each minute so it doesn't burn or overflow!.until it is hot , than you can add anything you want!. this is a fast easy way to make cheese sauceWww@FoodAQ@Com
