PORK CHOW MEIN

1 lb!. lean, boneless pork, cut into cubes
4 med!. stalks celery, thinly sliced
1/2 med!. onion, thinly sliced
1 (16 oz!.) can bean sprouts, drained
1 c!. water
1/4 c!. soy sauce
2 tsp!. instant chicken or beef bouillon granules
2 tbsp!. cornstarch
1/4 c!. water
Chow mein noodles

Add half pork cubes to food processor and pulse until meat is coarsely chopped, about 4 to 5 seconds!. Repeat with remaining pork!. In skillet, saute pork over medium heat until browned!. Add celery and onion and stir-fry until tender, but still crisp, about 5 minutes!. Stir in sprouts, water, soy sauce and bouillon!.
Combine cornstarch with water and stir until a paste!. Add to meat mixture!. Cook, stirring constantly, until sauce is thickened and clear!.

Server hot over chow mein noodles!. Serves 6!.



PORK FRIED RICE

2-3 c!. cooked rice
1/2 c!. diced boneless pork, fried
2 cloves garlic, minced
1 onion, chopped
2 sm!. eggs
butter
1 tbsp!. chopped scallions
1 tbsp!. bean sprouts

1!. Melt butter and saute onions and garlic!.
2!. Move onions and garlic to one side and scramble eggs on the other side!. When eggs are done, mix together with onions and garlic!.

3!. Add boiled rice and fried pork!. Mix well!.

4!. Add scallions and bean sprouts and serve!. Serves 4-6!.

Carnitas!

Cube up the pork into about 1" cubes!. Toss it with fat of some sort - best flavor is with melted lard, but you can use coconut oil or light olive oil too!. Don't be skimpy with the fat - you want each piece to be coated!. Sprinkle with some garlic salt and a little cumin and/or chili powder; spread onto a rimmed roasting sheet or pan and pop it into a 425* oven!. Let it roast til it's starting to brown and crisp a bit, maybe 20 minutes or so, then stir and continue roasting til it's as brown and crispy as you like it!.

It's great with scrambled eggs, in a LC tortilla, or just serve with a fresh lime to squeeze over it, some guacamole and/or salsa, and a nice salad!.

You can also cube it, throw it into a crockpot, and add a jar of green tomatillo salsa, some chopped onion and green bell pepper, and a can of diced green (mild) chiles, plus I like to use a can of green enchilada sauce but that can be hard to find in some areas!. Just make sure there's enough saucy stuff to cover the pork pretty well!. Let it cook on low all day and you have Chile Verde!.

Mexican Roll Ups
This is something I made up its a great way to use left over meat!.

Use one of your choice
Shredded Chicken, shredded beef or shredded pork
Put in skillet with 1 pkg of taco seasoning
Add enough water so that you may simmer it, not to much

After simmering like 20 min
Place small amount in to soft burrito shell, I like to use the large ones!.
Roll them up and secure with toothpicks
In deep fryer or skillet, brown til golden brown
They will be crunchy
Serve with sour cream, salsa or gucamole

Dice pork into 1/2" - 3/4" cubes
1 Diced onion
1 clove Crushed Garlic
Oil for frying,
4oz Cooked garden peas
8oz Cooked Rice
1/2 teas Chili powder
1 teas Curry powder
1/2 teas Ground coriander
1 teas Caraway seeds
1 - 2tble!. Soy sauce
Salt and Pepper

Soup, try to cube the meat!. If you don't have broth use chick stock or season what you've got!. Use your potatoes and veggies left over too!. Since everything is already cooked your pretty much are just heating it up so watch how long you heat it for!. You just want your stock hot!!Www@FoodAQ@Com

saute some onions in a little goya sauce, make some white rice, get a can of black beans, heat up pork!. Mix pork with onions and sauce, top rice with black beans!.!.!. waola!!
