how about some green beans, or asparagus!? I like to cut my asparagus in halt (lengthwise), put a little olive oil in the pan, put the asparagus in and cook with a lid on the pan for a few minutes, turn it over, cook again!. Put on a plate with salt, pepper and freshly grated Parmesan cheese on top!. Yum!

Or you could roast veggies!. Cut up into bit sized pieces: sweet potato, carrots, mini yukon gold potatoes, pearl onions, and any other root veggie you would like!. Line a deep dish with foil, add the root veggies, and mix/coat in olive oil that you've mixed with minced garlic, add salt and pepper to taste!. Cook for about 40 minutes at 475ish, then add sliced mushrooms, asparagus tips, sliced (and cut in half again) zucchini and yellow squash!. Cook for another 40ish minutes, or until everything is done!. Occasionally mix things with a set of tongs, so you don't damage the veggies!. A great fall dish that would go well with pumpkin!.

I would serve it with some crusty french breadWww@FoodAQ@Com

Last nite I cooked sliced sweet potatoes, carrots and apples in the same pan with just a little water and butter!. They were great!. I served with grilled chicken and steamed cabbage!. Since your pumpkin is similar to sweet potatoes, you could do the same!. Www@FoodAQ@Com

rutabaga would be good, pumpkin can be sweet and rutabaga more earthy or bitter so a nice balance

or mashed parsnips or fennelWww@FoodAQ@Com

I quite like the white look of parsnips!.
Peal and bake whole some onions!. They are a wonderful often forgotten vegetable!.Www@FoodAQ@Com

Sweet potatoes or carrots would go well in that!. Www@FoodAQ@Com

You could go with any other veggie that you would serve with squash!.Www@FoodAQ@Com

how about cooked brown rice in the pumpkin too!.
celery and apples!?Www@FoodAQ@Com
