Peanut butter candy and cookies!.

Here's a recipe I adapted from the Univ!. of Illinois web site!.

Almost Candy

? cup graham cracker crumbs
? cup butter
2 cups powdered sugar
1 cup creamy peanut butter
Chopped peanuts, optional
12 ounces semisweet chocolate chips, melted
1 tablespoon shortening

Blend together graham cracker crumbs, butter, powdered sugar,
peanut butter, and nuts if desired!.
Form into 1-inch balls!.
Melt chocolate chips and shortening together in microwave or double boiler!.
Insert toothpick into balls and dip in chocolate!.
Place on waxed paper-lined cookie sheets!.
Cool completely!.
Store in refrigerator!.

Note: Make this into a bar candy by spreading the peanut butter mixture into a 11 x 7-inch baking pan!. Spray the pan with nonstick cooking spray for easy clean up!.

Spread the melted chocolate over the peanut butter mixture and chill!. also, use about 6 ounces of milk chocolate for more of a candy bar taste!.

This is the very first (and possibly best) candy my kids learned to make!. It's so wonderfully, melt-in-your-mouth, peanut buttery that we never actually get to keep any in the house!.

1 C peanut butter
2 C powdered sugar
2 T butter, very soft
1 t vanilla extract
melted dipping chocolate

Mix peanut butter and butter with a spatula!. Add confectioners sugar and work in with the extract!. Chill, wrapped in plastic wrap!. Scoop out 1 t at a time, form egg-ish shape, and chill!. Dip in melted chocolate and chill again!.

Long before McD's offered dip with their apple slices, my kids were enjoying their very own peanutbutter caramel sauce for fruit slices, on ice cream (and sneaking spoonfulls when mom wasn't looking)!

2 T peanut butter
1 T store bought caramel sauce
1/8 t vanilla extract

Melt peanut butter in microwave until melty -- about 25 seconds!. Add caramel sauce and extract!. Mix and serve immediately!.
