Question: Ideas for recipies that freeze well!?
I'm due to deliver my 2nd child on November 9!. My church will send meals to my house for the first two weeks, and my mother & mother-in-law will be down for a while and will cook some while they are visiting!. I'm trying to think of meals that I can prepare now and just pull out of the freezer and pop in the oven when all of the free meals run out!. If you have anything that either you have frozen and it worked out well, or recipies that you believe will freeze well, please share!.Www@FoodAQ@Com

Veggie Jambalaya
Ingredients:
1 Tbsp!. oil
1 onion, chopped
1 green bell pepper, chopped
1/2 cup chopped celery
3 garlic cloves, minced
2 cups water
14 oz!. can diced tomatoes, undrained
8 oz!. can tomato sauce
1/2 tsp!. dried Italian seasoning
1/4 tsp!. crushed red pepper flakes
1/8 tsp!. fennel seeds, crushed
1 cup uncooked long grain rice
15 oz!. can butter beans, rinsed and drained
15 oz!. can red beans, rinsed and drained
Preparation:
In a large skillet, heat oil over medium heat!. Cook onion, green bell pepper, celery, and garlic in hot oil until tender, about 3-4 minutes, stirring frequently!. Add water, tomatoes, tomato sauce, Italian seasoning, cayenne and fennel seed!.
Bring to a boil and add rice!. Reduce heat to low, cover and simmer for 20-25 minutes until rice is tender, stirring frequently!.

Add beans and cover!. Simmer 5-10 minutes longer or until well heated, stirring frequently!. To freeze, cool casserole in refrigerator and ladle into plastic freezer containers!. Seal and freeze!. To reheat, place frozen jambalaya in saucepan and heat over very low heat, breaking up and stirring frequently, until hot!. Serves 6-8

Chicken Potato Casserole
Ingredients:
10 oz!. can condensed reduced fat and sodium cream of chicken soup
1 cup sour cream
1/4 cup milk
2 cups cubed cooked chicken
1-1/4 cups shredded Cheddar cheese
3-1/2 cups frozen hash brown potatoes, thawed
1-1/2 cups frozen peppers and onions, thawed
1-1/4 cups shredded Cheddar cheese
1-1/2 cups crushed potato chips
Preparation:
Preheat oven to 350 degrees!. In a medium bowl, combine soup, sour cream, milk, chicken and 1-1/4 cups cheese!. Spread three-quarters of this mixture in a greased 2-quart baking dish!.

Sprinkle hash browns and peppers and onions over the top of the casserole and press down lightly, then top vegetables with remaining soup mixture!. Sprinkle with remaining cheese and potato chips!.

Bake casserole, uncovered, at 350 degrees for 50-60 minutes or until bubbly!. Let stand for 5-10 minutes before serving!. 8 servings

To freeze, assemble casserole as directed, except do not thaw potatoes, peppers, or onions and do not sprinkle with potato chips!. Wrap casserole in freezer wrap or heavy duty foil and freeze!. Reserve potato chips in pantry!. To thaw and bake, let thaw overnight in refrigerator!. Uncover and bake at 350 degrees F for 60-70 minutes until bubbly!. Then top with crushed potato chips and bake 5-10 minutes longer!.

Ham Stuffed Manicotti
Ingredients:
14 manicotti pasta shells
1 onion, chopped
2 cloves garlic, minced
1 green bell pepper, seeded and chopped
1/4 cup butter or olive oil
3 cups cooked cubed ham
1/3 cup grated Parmesan cheese
6 Tbsp!. butter or olive oil
6 Tbsp!. flour
3 cups milk
2 cups shredded Swiss cheese
1/2 cup grated Parmesan cheese
Preparation:
Cook manicotti as directed on package!. Drain, rinse in cool water and set aside!. Meanwhile, cook onion, garlic, and green bell pepper in 4 Tbsp!. butter or olive oil until tender!. Add ham and set aside to cool for 10 minutes!. Stir in 1/3 cup Parmesan cheese!.
In another heavy saucepan, cook 6 Tbsp!. butter or olive oil until foamy!. Stir in flour and cook, stirring constantly, until mixture bubbles, about 3 minutes!. Add milk, and cook, whisking constantly, until sauce thickens!. Stir in cheese!. Mix 1/4 of cheese sauce with ham mixture!.

Fill manicotti shells with ham mixture (your fingers work best for this; it's messy, but most efficient)!. Spread about 1/2 cup cheese sauce in greased 13x9" glass baking dish and arrange filled shells over sauce!. If there is any leftover stuffing, just sprinkle it over the filled shells!. anything really!. I usually dont keep the ingredients all together!. like ill make pasta then the alfredo sause and freeze them separately!. i also buy the steam veggies that steam in the bag and i make chicken and freeze it too!. its a lot of work at once but it really does pay off!.

heres advice i tell a lot of ppl on Answers!.
Go to your local grocery and check out the frozen section!.
Notice all the fruits and veggies that are frozen, this gives you idea of what veggies to buy (the fresh ones) when they are on a really good sale and freezing them for later!. same jazz with certain fruits!.

also, look at the tv dinners!. Notice what foods are frozen!. You dont have to buy them, but you can make certain things and freeze them and the freezer isle gives you a general idea!.Www@FoodAQ@Com
