Question: Making muffins and need input!?
Im a student chef and Im doing finals and one of my finals is baking and I chose to make mini wedding cakes and the head chef want me to make muffins and cookies too!. So I want to do a Cranberry Carrot muffin Im thinking of putting some nutmeg in it to make people wonder what the added flavor is what do you think will it mess up my muffins!? My recipe calls for cinnamon, which I think would work better!.

CRANBERRY CARROT MUFFINS

(Makes 12 muffins)

Ingredients:

1 cup whole-wheat flour
1 cup all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/3 cup butter, melted
1 egg
1/2 cup brown sugar, more if desired
1 cup milk
1 cup finely grated carrot
1/2 cup dried cranberries

Directions:

Preheat oven to 400 degrees F!. Grease a 12-cup muffin pan!. In a mixing bowl, combine the flour, baking powder, salt, and cinnamon, and stir until cinnamon is evenly distributed!. In a second mixing bowl, combine the melted butter, egg, brown sugar, and milk, and blend until smooth!.

Add the dry ingredients to the wet, stirring to combine!. Stir in the carrot and cranberries!. Fill the muffin cups and bake 20 minutes!.Www@FoodAQ@Com

Nutmeg can be quite the herb and can become overpowering quit quickly, but I think it is a great idea!. I believe it will bring some nice warmth to the cupcakes!. But don't overdo it, or they will just be intolerable!.Www@FoodAQ@Com

you could use put in some molasses with some sugar; and that will give it an added taste if you have time then you can experiment and use wholemeal flour and the molasses tastes really nice!. Www@FoodAQ@Com
