Heavy cream comes from the cow with varying amounts of fat removed depending on the dairy!.

Milk has a portion of the fat removed these days depending on what type!. 1% is the lowest in fat while whole milk has the highest fat content!.

In the old days, which I vaguely remember, milk was sold with the cream included in the milk!. It was not separated out!. The cream would float to the top!. My mother would remove the cream and we would use it for dessert!.Www@FoodAQ@Com

Heavy cream can also be called whipping cream it has a very high fat content!. You could also use half and half!. The more fat the richer your sauce will be!.
This is a good recipe
Olive Garden Alfredo Fettuccine
1 pint heavy cream
1 stick (1/2 cup) butter
2 tablespoons cream cheese
1/2 - 3/4 cup Parmesan cheese
1 teaspoon garlic powder, add in more to suit your taste if you prefer
Salt and pepper, to taste
8 ounces fettuccine, cooked and drained

In a saucepan combine butter, heavy cream, and cream cheese!. Simmer this until all is melted, and mixed well!. Add the Parmesan cheese and garlic powder!. Simmer this for 15 - 20 minutes over low heat!.

Toss pasta lightly with sauce, coating well!. Leftovers freeze well!.

No, it's not milk!. It was milk at one point, but they let it sit for a while and the heavy part is separated from the drinking milk!. It's like cream, but richer, thicker!. You have to buy "heavy cream" for alfredo or it will come out drippy insteady of thick & creamy!.
