How do you make lemon butter?!
How do you make lemon butter!? what are the ingredients and how much of each do you put in!?

LEMON CURD (OR BUTTER)
1 c!. butter
1 1/2 c!. sugar
Grated rind of 2 lemons
1/2 c!. lemon juice
5 beaten eggs
Melt butter in top of double boiler!. Add sugar!. Stir in beaten eggs, lemon juice and rind!. Cook until nearly thick, stirring constantly!. Cover and cook for 10 minutes longer!. Cool and store in jars, preferably in refrigerator!. Makes 4 small jars!.

3 lemons, juice

3 tbsp!. cornstarch
2 c!. boiling water
2 tbsp!. butter
Beat eggs, add lemon juice and rind!. Add sugar!. Make thickening with cornstarch and a little water, add to first mixture!. Add boiling water!. Bring to boil, remove from burner when thick!. Add butter!. Makes 1 quart!.
Can be cooked in the microwave, stir occasionally, until thick!. Remove and cover to prevent a skin forming on the top!.

LEMON DILL BUTTER
4 tsp!. minced or chopped shallots
1 tbsp!. fresh dill or 1/2 tsp!. dried dillweed
4 tsp!. lemon juice
6 tbsp!. butter, salted
Gently simmer shallots and dill in the lemon juice until juice is almost evaporated and cool!. Whip butter to a light and fluffy state!. Fold in the dill and shallot mix!. Serve with baked or broiled fish or plain potatoes!. Makes 1/2 cup

1 stick (1/2 cup) unsalted butter, softened
1 tablespoon English-style dry mustard
1 1/2 tablespoons fresh lemon juice
1 teaspoon Worcestershire sauce
1/8 teaspoon cayenne, or to taste PreparationIn a food processor or in a bowl with a whisk blend together the butter, the mustard, the lemon juice, the Worcestershire sauce, the cayenne, and salt to taste until the mixture is smooth!. Transfer the butter to a bowl and chill it, covered, for 8 hours to let the flavors develop!. Serve the mustard lemon butter on grilled fish or chicken!.
