Hi AT, think of it this way, breakfast should be filling, healthy and nourishing!. it is the most important starter for the day!. Have you thought of going tropical one day of the week looking at tropical fruit like mango, star fruit, pineapple accompanied with or mixed with a yogurt like Activa!. Another day have ham and cheese grilled fingers, with a cool juice!. I keep saying this in a lot of my answers, use your imagination!.

A pound of nice crispy BACON (thin, thick, peppered, etc!.)! No, honestly ~

I'm not a breakfast person, so when I know it will be a day with no "lunch hour", I prefer anything in a tortilla (I love peppers and Mexican food)!. I also love oatmeal and cream--of-wheat, but would prefer the following over anything:

1!. Tortilla with a little butter and any jam (plum, grape, huckleberry are delicious), wrap it as a burrito, and microwave it for about 15-20 seconds!. You can also add peanut butter (I do when I am feeling a protein low ~ it's delicious, but a bit filling for me), or even add or replace the jam with a medly of chopped soft fruits/berries!.

2!. Tortilla filled with refried beans, tons of jalapenos, and any Mexican cheese blend or cheddar/jack, and microwave approximately 1 minute!. Don't be afraid to also load it with onions and/or salsa before nuking!

3!. Tortilla filled with chili (homemade or from a can), topped with Mexican cheese blend or cheddar/jack!. I add a pile of jalapenos (green chiles would be good too), and microwave until done!.

4!. Tortilla filled with scrambled eggs, left-over potatoes (cube if you need to), and cheese!. Add a protein if you want such as left over ham, steak, bacon, or sausage, and microwave until warm!.

5!. Tortilla filled with left-over broccoli/cheese, or steamed broccoli topped with either Mexican cheese or cheddar/jack, and microwave until warm!.

Oh, and most of the above can also be coverd with a canned green chile sauce, topped with Queso Fresco cheese, etc!. Options are limitless!Www@FoodAQ@Com

Here is a suggestion:
BREAKFAST FRITTATA



Prep and Cook Time:

20 min!.
Ingredients:

? medium onion, minced
4 medium cloves garlic, chopped
? lb ground lamb or turkey
2 + 1 TBS chicken broth
3 cups rinsed and finely chopped kale, (stems removed)
2 whole free range chicken eggs
3 egg whites
salt and black pepper to taste


Directions:

Preheat broiler on low!.
Heat 1 TBS broth in a 9-10 inch stainless steel skillet!. Healthy Sauté onion over medium heat, for about 3 minutes, stirring often!.
Add garlic, ground lamb or turkey, and cook for another 3 minutes on medium heat, breaking up clumps!.
Add kale and 2 TBS broth!. Reduce heat to low and continue to cook covered about 5 more minutes!. Season with salt, pepper and mix!.
Beat eggs, season with a pinch of salt and pepper, and pour on top of mixture evenly!. Cook on low for another 2 minutes without stirring!.
Put under broiler in middle of oven, about 7 inches from the heat source, on low, so it has time to cook without the top burning!. When it gets firm it is done, about 2-3 minutes!.

You can eat anything you like for breakfast!. If it's good enough for any other meal, it's good enough for breakfast!. Doesn't need to be eggs or cereal or anything else traditional!. I like cold pizza for breakfast!. Www@FoodAQ@Com
