If they are thick enough- I saute onions and mushrooms in butter while broiling the pork chops for about 15 minutes!.
Then I slice the pork chop enough to stuff the onions and mushrooms in along with some cheddar cheese then I put them in the oven to finish cooking, covered with aluminum foil for about 1/2 hour!.
Yum Yum, stuffed baked chops!. You can use bacon, green peppers, green onions, raisins, really anything you want!. I serve them usually with a baked potato and peas!.

Sweet and Sour Pork
For pork:
1 pound lean pork, cut into thin strips or cubes
2 Tbsp!. ground ginger (or fresh)
? cup soy sauce
1/2 cup a/p flour
? cup corn starch
4 cups oil
For sauce:
2 Tbsp!. soy sauce
1/2 cup rice vinegar
1/2 cup sugar
1 red and 1 green bellpepper, sliced thinly
1 small onion, cut into strips
1 can pineapple chunks, drained (reserve juice)
? cup corn starch
Combine pork with ginger and soy sauce for 15 to 20 minutes!. Mix the flour and ? cup corn starch together then toss with the pork!. Be sure every piece of pork is coated by the flour mixture!. Place oil in frying pan and heat to med-high!. Fry the pork in batches; fry until a crust forms and is golden brown!. Remove meat and drain
Meanwhile, in saucepan, place sugar, vinegar, and soy sauce!. Bring to a boil and stir until sugar dissolves!. Add onions, bellpeppers, and pineapple chunks!. Mix ? cup cornstarch w/ pineapple juice, add to sauce and stir well!. Bring to a boil for 1 minute until sauce thickens, remove from heat!. 1 tablespoon Dijon mustard
1 tablespoon ketchup
2 tablespoons lite soy sauce, divided
6 teaspoons honey, divided
1 (3/4-pound) pork tenderloin
Vegetable cooking spray
2 teaspoons rice vinegar
1 teaspoon sesame oil
1 teaspoon chili garlic sauce
1/2 cup chopped green onions
1/4 cup chopped fresh cilantro
Garnish: fresh cilantro sprigs
Stir together minced garlic, next 3 ingredients, 1 tablespoon soy sauce, and 2 teaspoons honey!.
Spoon garlic mixture evenly over pork, rubbing well into pork!.
Place pork on a rack coated with cooking spray in an aluminum foil-lined roasting pan!.

1/2 cup chili sauce
1/4 cup firmly packed brown sugar
