Answers:
They can be either veg'an or non-veg'an, just like most things!. Just google "vegan gingerbread recipe" and I'm sure you'll come up with a lot of options!. You can make icing easily by combining confectioners sugar (There is non-bone char confectioners sugar, but it's kinda expensive, and you'd most likely have to order through the mail!. I just use the regular stuff!.) with a little melted margarine, some soymilk, and a bit of vanilla!. Start with the sugar, add the margarine, & vanilla, then a little milk & mix it up!. If it's too pasty, add more milk till you get the right consistency!. If you wind up using too much milk, you can just add more sugar!. You're gonna use much more sugar than milk!. When you have the consistency right, you can add more vanilla if you think it needs it!. You can add other flavorings too, or some food coloring!. For a cake-type frosting, use about 1/2 cup room temperature margarine, add a little milk and vanilla (maybe about 1/4 cup milk, and vanilla just to your taste), and then keep adding confectioners sugar till it's creamy!. To make chocolate, just replace some of the sugar with cocoa until it's as chocolatey as you want it!. :)

Oh, and by the way, Crisco is not lard, it's vegetable shortening!. It's certainly not healthy (it's hydrogenated) but it is vegan!. There is non-hydrogenated shortening though!. I use Spectrum brand!.Www@FoodAQ@Com

Iced Gingerbread recipe

175 g margarine
4 tbsp golden syrup (substitute light corn syrup)
4 tbsp black treacle (molasses)
7/8 cup (175 g) 6 oz dark brown soft sugar
3 cups (350 g) wholemeal flour
1 tbsp ground ginger
1 tbsp baking powder
1 tsp Bicarbonate of soda (Baking soda)
1 tsp salt
1 medium egg, beaten
300 ml milk
1 1/2 cups + 3 tbls (250 g) icing sugar (confectioners sugar), sifted
2 tbsp water
50 g crystallized ginger, chopped


method
1!. Grease and base- line a 22 cm square dish!.

2!. Place the margarine, syrup, treacle and sugar in a bowl and microwave on HIGH for 2 minutes, until the margarine has melted!.

3!. Place the flour in a large bowl, then sift in the ginger, baking powder, bicarbonate of soda and salt!. Beat in the egg, milk and melted mixture!.

4!. Pour into the prepared dish and cook on HIGH for 12 minutes!. Leave to stand for 10 minutes, then turn out onto a wire rack to cool

5!. Beat the icing sugar with the water to make a thick glace icing, then spread over the top of the cake!. Sprinkle with the chopped ginger!. Leave to set, then cut into fingers!.

GINGER BREAD

2 1/2 c!. sifted flour
2 1/2 tsp!. baking powder
1 to 2 tsp!. ginger
1 tsp!. cinnamon
1 egg (or beaters)
1/4 tsp!. soda
1/2 tsp!. salt
1/2 c!. sugar
1/3 c!. shortening
1 c!. molasses

Sift flour, add baking soda, baking powder, salt, spices and sugar!. Cream shortening, egg, molasses and milk!. Then add dry ingredients to creamed ingredients; mix well!. Bake 50 minutes at 375 degrees in greased and floured bread pans!.

GINGER BREAD

1 1/4 c!. flour
1/2 tsp!. soda
1/2 tsp!. salt
1/2 tsp!. cinnamon
1/2 tsp!. ginger
1/4 tsp!. cloves

Mix above together in 2 quart pitcher with a wire whip!.

1/3 c!. packed brown sugar
2 eggs
1/3 c!. light molasses
1/4 c!. hot water

Mix all together on low speed to blend!. Blend on medium speed 2 minutes!. Spread into lightly buttered quiche pan!. Microwave at 50% for 6 minutes, rotating 1/4 turn every 3 minutes!. Microwave on high 1-4 1/2 minutes!. Let stand 5 to 10 minutes!.
