cook 1 1/2 cups of rice till nearly finished in lightly salted water!. Drain and set aside!.
Meanwhile, saute a medium chopped onion in 4 tablespoons butter till golden!. add 4 tablespoons flour and stir till bubbly and cooking!. Remove from heat!. Add 2 cups milk and 2 cups of shredded Cheddar cheese!. Stir over low heat till well blended!. Season with salt and pepper to taste!. When thick and the cheese is melted, pour over rice and turn into buttered baking dish!. Sprinkle generously with more cheese on top and slip into a 350 degree oven till golden brown and bubbly!. if you want this runnier, you may add a bit more milk!.
I like to add chopped broccoli or chopped cauliflower to make a complete starch and veggie side dish!. You could add crumbled bacon to the top if you so desired!.Www@FoodAQ@Com
