Anyone know a good fish pie recipe?!
My daughter had a ready made one the other night and it were yummy!I just don't know what the sauce would be and what fish to use!. Www@FoodAQ@Com

I love making fish pie, especially as it's so adaptable to your own taste!.
If you're in a hurry use a packet Schwartz sauce for fish (dried packet or wet offer flavours like lemon butter or watercress and stilton or orange and dill etc)
To the sauce (made up if using dried packet) I add raw fish (cod/haddock, smoked cod/haddock, pollock, salmon (anything you like)), frozen peas and/or fried leeks!. Tip into a baking dish, add mashed potato (again made up from Aunt Bessies frozen if time is against you)!. Add cheese and/or mustard to the mash - whatever you fancy!
Put in preheated oven (190 degrees C) and bake for 30 minutes!.
This way the fish is perfectly cooked and tastes brilliant as it has only been cooked once!.
You can use any fish, sauce and mash flavourings you like - so be creative!.!.!.!.!.!.!.as I am and have to explain to the husband every 'Fish Friday' why this weeks pie isn't the same as last!! I can't help experimenting!. Enjoy :o)

1 lb potato, mashed
2 oz cheese, grated
1 tablespoon breadcrumbs
Filling
1 lb white fish
2 oz prawns (optional)
? pint milk
1 oz butter
1 tablespoon plain flour
2 tablespoons parsley, chopped
Base
2 oz butter
2 oz spinach
good grating nutmeg
to taste seasoning
METHOD:
1!. In a saucepan place the fish and the milk!. Bring to the simmer and leave for 2 minutes!. Take off the heat, and strain off the liquid (the "fish milk")!.
2!. Wash the spinach well, and drain!. Melt the butter in a saucepan, add the grated nutmeg and seasoning, before adding the spinach!. Place a lid on top bring to the boil, and then turn off the heat!. Remove the lid and drain if necessary, before placing in an ovenproof dish!.
3!. In another pan, make a sauce by melting the butter and stirring in the flour!. Cook for a minute, then add the fish milk a little at a time!. Add the parsley and seasoning!.
4!. Flake the fish and add to the sauce!. Pour over the spinach base!. Top with the mashed potato, and bake at 180°C/350°F/Gas Mark 4 for 20 minutes!. Then sprinkle the top with the breadcrumbs and cheese!. Continue to cook for another 10 minutes!.

Poach the fish!.

Put the fish in the frying pan and pour over 500ml of the milk!. Stud each onion quarter with a clove, then add to the milk, with the bay leaves!. Bring the milk just to the boil - you will see a few small bubbles!. Reduce the heat and simmer for 8 mins!. Lift the fish onto a plate and strain the milk into a jug to cool!. Flake the fish into large pieces in the baking dish!.
Hard-boil the eggs!.

Bring a small pan of water to a gentle boil, then carefully lower the eggs in with a slotted spoon!. Bring the water back to a gentle boil, with just a couple of bubbles rising to the surface!. Set the timer for 8 mins, cook, then drain and cool in a bowl of cold water!. Peel, slice into quarters and arrange on top of the fish, then scatter over the chopped parsley!.
Make the sauce!.

Melt half the butter in a pan, stir in the flour and cook for 1 min over moderate heat!. Take off the heat, pour in a little of the cold poaching milk, then stir until blended!. Continue to add the milk gradually, mixing well until you have a smooth sauce!. Return to the heat, bringto the boil and cook for 5 mins, stirring continually, until it coats the back of a spoon!. Remove from the heat, season with salt, pepper and nutmeg, then pour over the fish!.
Assemble and bake!.

Heat oven to 200C/fan 180C/gas 6!. Boil the potatoes for 20 mins!. Drain, season and mash with the remaining butter and milk!. Use to top the pie, starting at the edge of the dish and working your way in - push the mash right to the edges to seal!. Fluff the top with a fork, sprinkle with cheese, then bake for 30 mins!. Make up to a day ahead, chill, then bake for 40 mins!.

375g of old potatoes*
1 onion
250ml of water
? of a teaspoon of salt
250ml of milk
350g of white fish**
2 tablespoons of butter
3 tablespoons of flour
? a tablespoon of parsley
Salt and ground pepper to taste
? a tablespoon of butter
? a tablespoon of milk
Ground pepper to taste
METHOD
Peel the potatoes and chop them into quarters!. Peel the onion and chop it into tiny pieces!.
Put the water and salt into a saucepan on a medium heat!. Add the potatoes!. Bring to the boil, then turn down the heat until it is just boiling (simmering)!. Put the lid on the saucepan and cook for 20 to 25 minutes until soft!. Check the water level from time to time and top up if it starts to dry out!.
While the potatoes are cooking, put the 250ml of milk, fish and onion into a frying pan on a medium heat!. Cook for about 10 minutes until the fish is firm and opaque!.
Strain the milk through a sieve or colander into a bowl!. Put the fish and onion onto a plate!. Break the fish into small pieces!. Throw away the skin and bones!.
Drain the potatoes and mash with the ? a tablespoon of butter and the ? a tablespoon of milk until it is smooth and lump free!. Season with the pepper!.
Put the 2 tablespoons of butter into the saucepan the fish was cooked in on a medium heat!. Melt the butter!. Add the flour and cook for a minute, stirring all the time!. Take off the heat!. Add the milk the fish was cooked in a bit at a time!. Stir each time to make sure it is smooth!. When all the milk has been added, put the pan back on the heat!. Bring to the boil!. Keep stirring!. Turn down the heat until it is just boiling (simmering)!. Cook for 2 minutes, stirring all the time!.
Add the fish, onions and parsley and stir!. Season with the pepper!.
Put the fish mixture into an ovenproof dish!. Level off the surface!. Put the mashed potato on top!. Spread to cover the fish mixture!. Make artistic swirls in the mashed potato!. This increases the surface area and makes the top crisper!.
Cook in a preheated oven at 200°C, 400°F, gas mark 6 for about 30 minutes until golden on top!.
ADDITIONS & ALTERNATIVES
If you must, use a packet of white or parsley sauce mix according to the instructions on the packet, but substitute some of the liquid for the milk the fish was cooked in!.
Use 100g of cooked prawns instead of 100g of the fish and add them to the fish mixture when you assemble the pie!. Add a chopped hard-boiled egg to the fish mixture when you assemble the pie!.
Sprinkle 50g of grated Cheddar cheese on top of the potato, or even into it as it being mashed!.
TIPS
The trick with the sauce is to keep stirring!.
* New potatoes make rubbish mashed potato!. Use old ones like King Edward’s or Desiree Reds!.
** Use cod, coley, haddock, hake, ling, plaice, pollack or whiting fillets!. Use smoked and/or dyed fish, because smoked fish tastes nice and dyed fish looks pretty!.Www@FoodAQ@Com

There are lost of good recipes but the easiest by far is a good peice of cod and as a sauce use a tin of campbells condenced mushroom soup mashed potato on top and thats is give it a go its simpleWww@FoodAQ@Com
