LIBBY'S PUMPKIN ROLL


This easy pumpkin cake rolled around cream cheese filling is simply delicious!.

Cake Ingredients:

Powdered sugar
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 eggs
1 cup sugar
2/3 cup LIBBY'S 100% Pure Pumpkin
1 cup chopped walnuts, if desired

Filling Ingredients:

1 (8-ounce) package cream cheese, softened
1 cup sifted powdered sugar
6 tablespoons LAND O LAKES? Butter, softened
1 teaspoon vanilla
Powdered sugar, if desired


Heat oven to 375°F!. Grease 15x10x1-inch jelly-roll pan; line with parchment or waxed paper!. Grease and flour paper; set aside!. Arrange clean thin, cotton kitchen towel on counter; sprinkle with powdered sugar!.

Combine flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl!. Combine eggs and sugar in large bowl; beat until thickened!. Add pumpkin; beat until well mixed!. Stir in flour mixture!. Spread batter evenly into prepared pan!. Sprinkle with walnuts, if desired!.

Bake for 13 to 15 minutes or until center springs back when lightly touched!. Immediately loosen cake from edges of pan; invert onto prepared towel!. Remove pan; carefully peel off paper!. Roll up cake in towel while hot, starting with 10-inch side!. Cool completely on wire rack!.

Beat cream cheese, 1 cup powdered sugar, butter and vanilla in small bowl until smooth!. Carefully unroll cake; remove towel!. Spread cream cheese mixture over cake!. Reroll cake!. Wrap in plastic food wrap; refrigerate at least one hour!. Sprinkle with powdered sugar before serving, if desired!.!.

TIP: Be sure to put enough powdered sugar on the towel before rolling up cake so it will not stick!.Www@FoodAQ@Com

I've made 2 of them every Thanksgiving for about 30 years! Jellyrolls are actually extremely easy:) !.!.!. Just be sure to keep checking it, because they bake quickly!. Put alot of powdered sugar on a clean dishcloth, to invert the jellyroll pan onto; then roll the towel & cake up tightly and let it cool!. Gently unroll it, and fill and reroll it!. It might crack, but you can just put some extra filling, or whipped cream, or powdered sugar over that part (unless you can put the crack on the bottom)!. You can make them a few days ahead, and wrap (filled) in saran and refrigerate; or put them into freezer ziploc baggies and freeze them!.!.!.!.!.!.!.!.Www@FoodAQ@Com

I make it a lot, it is so delicious!. I like this recipe best because you cook the filling and the cake all together and then roll it all up!.

1 8oz pkg!. cream cheese
1/3 cup sugar
4 eggs
1 tbsp!. milk
3/4 cup flour
1 tsp!. bkg!. pwdr
1 tsp cinnamon
1 cup sugar
2/3 cup canned pumpkin

Grease a 15x10x1 inch jelly roll pan!. Line with waxed paper and grease paper!. Set 2 tbsp!. cheese aside!. In a bowl beat the rest!. add 1/3 cup sugar until smooth!. Beat in one egg and milk; spread in pan!.
Combine flour, powder, cinnamon and 1/4 tsp!. salt; set aside!. Beat remaining 3 eggs on high for 5 min; gradually add 1 cup sugar, beating 3 minutes!. Stir in pumpkin!. Fold in flour mixture!. Carefully spread batter over cheese mixture!. Bake at 375 for 15 min!. Immediately loosen cake and invert onto a towel sprinkled with powdered sugar!.

Peel off paper and roll up without towel from the short side!. Cool on a rack!. Store in fridge!. Makes 10 servings!.

Icing:
Combine reserved 2 tbsp!. cheese, 2 tsp!. milk and 1/4 tsp vanilla!. Slowly beat in 1 cup icing sugar until smooth!.

This is a delicious cake!. Frost it or not, doesn't matter!. I just sprinkle with icing sugar!.Www@FoodAQ@Com
