For a pot roast I would use a dutch oven on the stove!. Depending on the cut of meat, you could cook it low and slow in a roaster in the oven!. You can cut your roast into sections to fit in your crock pot or if your roast fits inside, but you are just unable to put the lid on the crock pot tightly, you can put the roast in and set the lid on top and cover the top of the crock pot (lid and all) with foil!. It will shrink down a lot as it cooks and the lid will probably slide right into place!. I do this all the time-I have a big family and need to upsize my crock pot!Www@FoodAQ@Com
Unless you have a big family or love leftovers, then just cut the roast into chunks and cook a smaller amount that fits the crock pot!. Keep the other pieces frozen and use them later!. You can get two or three meals from a single large roast!.
If you do like to cook ahead, then you may want to buy a large size crock pot in an oval shape!. Those hold more and work better for the shape of roasts or turkey breasts and so on!.
If you want to cook the full sized roast in the oven, then you can use a Dutch Oven or even a casserole dish!. If you use a casserole dish, then use tin foil to lock in the heat if you don't have a lid!. Cook low and slow - about 325 to 350 degrees F for close to two hours!. Www@FoodAQ@Com

i always make a roast this way, and it is so tender!. 1st put your roast in a roasting pan!. then season it with garlic powder, pepper, season salt!. then chop & add your veggies, potatoes, carrots, onions, ect!.!.!.,(i also add in cabbage, my husband hates cabbage, but when its cooked he cant tell)!. season the veggies with the same seasonings!. add about 2 inches of water!. then seal the top with tin foil tightly around all edges!. poke two tiny holes into the top!. cook in the oven at 250-260 for about 6 hours, then turn heat up to 325 for about 1 hour!. then if you have left overs, you can throw it in a big cooking pot & add beef broth to make a quick stew( about 15 min!.)
