Dried beans,soaking time?!


Question: Dried beans,soaking time!?
My sister is vegan,and arriving tonight in approx 7-8 hours(it is 10!.15am now)!.i forgot to soak dried beans over night,so they are soaking now!.i still need to cook them for 2-3 hrs after soaking!.do they really need 8 hrs soaking time!? or can they have less time!.i don't want to poison us!!.i can't make anything else for her as beans are the only suitable food i have for her,and i don't have money to go buy anything else! thankyou!Www@FoodAQ@Com

Soaking is just the process of reconstituting the food stuff which has been dried!. You can shorten the soaking time by increasing the cooking time!. Simmer them for two hours now on a really low heat then soak in the same water for a few hours, drain, then cook as normal!.Www@FoodAQ@Com

Put one pound of beans in a gallon of water with salt and bring to a boil!. Let sit for an hour!. Bring back up to a boil and simmer for about an hour!.

I find if you try to boil without the hour break they do not cook as well and tend to burn!. Www@FoodAQ@Com

i don't think you will be poisoned by not soaking them overnight!.you may have to cook them a little longer!.they should be fine!.enjoy those beans!.Www@FoodAQ@Com
