I use oil a lot, basically I don't think I've ever made anything without oil or butter!

Actually, I use quite a lot of it, in moderation!. I know that sounds confusing so let me explain!. Instead of just using butter or Olive oil, I combine the two, I call them the sisters of flavors and I use just a touch of each, they compliment each other so well!. It's like tasting a great soup then adding a little more salt and tasting it again, it just seems to bring all the flavors of whatever I'm cooking together better!. For cooking and most of my baking, I always use Unsalted unless the recipe specifically requests salted!. Basically, 90 percent of what I cook in my house, either starts with Olive Oil, butter or both but in small amounts!. A little bit of love goes a long way!Www@FoodAQ@Com

I grew up with Italian cooking, and fell in love with Spanish style cooking, so Olive oil is the way I go most of the time!. I do like to flirt with french, and got into Cajun/Creole while living in New Orleans, so I like to use butter sometime!. I am also messing with reserved bacon grease as a saute oil when I want a nice smokey flavor!. The important thing to know here is the flavors you impart, and he health benefits of using oils which are better for your cholesterol!. Stay away from hydrogenated oils like margarine and veg' shortenings since trans fats are actually worse than sat fat!.
It all depends on what your cooking, and what flavor you want where!. Olive oil will impart more of a snappy vegetal and aromatic background, while butter is more rich and is necessary for baking (unless you use lard, which no one seems to do anymore)!. Personally, I love the flavor of olive oil with my eggs and meats!. Butter is more for rich sauce making like roux (1pt butter 1 pt flour)!. Below is a great example of this classic french technique!. French style is great for the wintertime, hearty cooking, and meshes great with British and American home-style taste buds!. Think biscuits and gravy!. You cant do that with olive oil, I dont care if you need a triple bypass!. Www@FoodAQ@Com

Its Depends When You bake Cookies, Brownies, Risotto then you use Butter, when you are Cooking Chicken, or Fish then you use Oil!.

Butter and olive oil -- I use a lot of both!. I usually try to keep at least a pound and a half at all times and I buy it every week and a half or so; olive oil, on the other hand, maybe every month or two!. La cuisine au beurre, c'est toujours meilleure!. Www@FoodAQ@Com
